The Blueberry Sour Cream Coffee Cake My Family Loves

This coffee cake is a favorite of my family's! The cake is made with sour cream for a super moist cake, and fresh blueberries are layered in the center for a burst of sweet flavor. It's truly one of our favorite desserts to make for any occasion!
RECIPE: asimplepalate....
INGREDIENTS
Crumble topping
1/2 cup coconut sugar, or white sugar
2/3 cup all-purpose flour
2 teaspoons cinnamon
5 Tablespoons salted butter, melted and cooled
Coffee Cake
1/2 cup or 8 Tablespoons salted butter, softened to room temperature
2/3 cup coconut sugar, or white sugar
2 eggs, room temperature
2 teaspoons vanilla extract
1/2 cup sour cream, or you can swap for plain Greek yogurt
2 Tablespoons milk
1 1/3 cup all-purpose flour
1 small pinch of salt (if using unsalted butter use 1/4 teaspoon of salt)
1 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 cups fresh blueberries

What a perfect way to welcome in the fall/cooler weather! I really like the idea that you used fresh blueberries whole. Sometimes recipes that use berries are often reduced with sugar. Too sweet in my opinion! Looks scrumptious! Keep up the great work!!💜

Good Morning Bethany I'm up enjoying my pumpkin spice coffee thinking how good this would pair with it.I love blueberry everything.If you've never tried Wymans wild blueberries from the frozen section at your market.Theyre Amazing a great sweet flavor.I know the sour cream has to make these really moist YUM Im craving some Cider donuts with chunks of fresh apples. Hopefully this is the first of many more desserts to come? Many coffee cakes are dry. So, glad you use sour cream to moisten it up. You can't get better than this from a bakery, that's for sure. So, being you & Drew like to bake, don't suppose you'd be interested in starting a mail-order desert business? We'd keep you guys so busy in orders, you'd have to recruit your parents to help!

I want to try this coffee cake on them. Phil is seriously allergic to coconut. I don't use cane sugar. I use sugar in the raw. Is that Ok for this coffee cake or something else?

Hi Bethany Sorry no coincidences today, but i do have my mother-in-law coming for tea on Saturday, and i know she likes coffee cake, so i will try this and keep my fingers crossed (Im making her favourite crab sandwiches, which i caught by the way) Won't lie sour cream and blueberry's added to a coffee cake, ok we will give it a try. re: the sugar. she used a better sugar, per her. I use a "golden sugar" that is a slight bit different from a commercial golden sugar. In mine, i ask my massage therapist to sprinkle her pee wee on me and some sugar on a plate that i strategically paced nearby. I use the "yellow" stuff for the win
