Ironically, I agree with their decision not to rely on tips, I think tip culture is toxic and awful and it results in waiters being punished, especially in cases like this one. But not telling your customers you're doing that is just one more point to their general shittiness and egotism. The owner probably thinks he deserves what little money gets left on the table for waiters. Frankly based on this, the waiters are the only ones who deserve to be paid decently here, so I'm glad they don't have to depend on the benevolence of customers being served bad food and insulted by non-waitstaff, because they'd be broke.

The particular offense is in America where waiters make below minimum wage (which is already dirt low). They /need/ tips, which should never be the case. I like how this was one of the few places where Gordon going ham on the food wasn’t the memorable part, it was one of the most memorable episodes ever because the owners were absolutely insane. This was my first Kitchen Nightmares episode. My grandmother had booked a staycation in a casino in my city, and my mum brought me to visit her.
