Many celebs use a strategy of false collective. Instead of saying "I reached a million subs" they say "We did it"- Makes followers feel as a part of it and connected with them. Its not the case with every streamer/utuber but when everyone else does it, the feeling gets normalised. Also, what can happen is that when someone you follow shares a lot about their life you could get to the conclusion that you'd know them pretty well and mistakenly assume things about them.

Im not even famous and i was in cosplay waiting for my friend to get our food and a neck beared came up to me sniffed me and said "thats funny i thought you would smell like doughnuts." Yes i was Shinobu but i was so freak out. But the best part of the con was when my feet gave up on me and my friend carried me to the food court. He was as meliodas and everyone cheered because he picked me up.

Sadly I've seen similar things. But I make sure boundaries are said when I'm at conventions.

I bet the people in these stories get reminded of the things they did right before they go to bed and cringe themselves to sleep lol

John mayer summed fan interactions up in a video. "The girl in front of you is never the girl you imagined in your dreams. You become all fatherly and say maybe you should just put that jumper back on please".

How can I believe these anime KZbinrs when they say "real life is not an ecchi anime" ever again after hearing these stories?

You finish signing the staff, look up and smile and say no, thanks for coming to see me though and send them along... A lot of these could be solved with a simple and straight no.
