James Kantor I love mayonnaise but I don’t much like the avocado oil and olive oil once whisked tastes bitter so I’m told. Do you think pure MCT would work? That is another oil that gets mixed up with seed oils.

After just one month of eating almost carnivore I decided to “treat” myself with some cheap peanut butter on saltine crackers. It tasted disgusting. My palate has changed so much in just one month, all I could taste were chemicals. A comfort food I used to love, that I’ve been eating since I was a child, is now gross to me. That really drives home how big a change I have made in my life.

I remember it too and that's when their food got gross. The most notable in our city is a diner called Stake N Shake. People would flock there just for their fries. They came in a plain brown paper bag that was greasy as all get out from the tallow. They were the best fries ever... When they switched to veggie oils... The fries were disgusting cardboard and people stopped going there for them.

Fried food is the king of all foods. Fried food take you places no other food can. Fried food makes love to every cell, organ, and system in my body. I can remember my mother frying chicken in that iron skillet filled with grease as a child. Nobody can fry chicken like my mother. Fried chicken, fish, steak, pork chop, and liver is what I was raised on. My Lord blessed me with a mother that is a awesome southern cook. Fried food belongs to the African American community. It's what we know, its what we do. Fried food is our culture. To give it up is never an option, its a part of me. I am willing to cut back and I have. When my mom get that iron skillet out, I know what time it is. To turn it down is unimaginable.

Thank you! Yes, we have to read the ingredients on everything! Even a package of what looks like just meat. In the grocery last week both chicken and pork that looked like just meat actually stated on the package that they had 20% 'solution' in them! I am so frustrated that for 76 years I was lied to about which oils and foods were good for me and that wholesome meat and saturated fat was bad for me! And that so many people including my own family still believe the false things we were taught. I got an airfryer about a week ago and now I don't need any cooking oils at all. Yum.

100x this. Heat up 1T bacon grease, plop a 3oz ball of 80/20 in the pan and smash. Sprinkle with salt and pepper and do not touch for 2 minutes. Flip, smash edges down, salt and pepper this side and cook for 1 minute. I think this burger is better than Smashburger and 5 Guys and sooo much cheaper.

When frying in lard, keep in mind that it's a low temperature fat. It should not be heated beyond 360°F/185°C.

Steaming & pressure cooking everything, except for Liver & onions I use grill . All chicken meat is old hens that stopped laying eggs. Even pressure cooking chicken won't get out the toxins and drugs out of chicken meat, it will only kill bacteria. Very seldom I eat chicken. Wild hunted & tested grass greasing meat is the best.

Tallow, lard, butter avocado oil (real avocado oil), and pure coconut oil. I use olive oil for low heat cooking and on cold foods like salads. I do believe my avocado oil is real. I get it from a local Amish store, in a clear glass bottle and the oil itself is green with a very light avocado smell. I love my airfyer/combi oven for "fried" chicken, beef jerky, steak, making sausage breakfast patties and baking a package of bacon both as prep ahead cooking...just put them in vacuum seal food storage bags and freeze them until ready to use...that is, if they make it to the freezer lol. Anyway, back to topic...great video Dr Berry! You are my first source of info on diet and diet-related health issues! I learn so much from you!

I fry just about everything in bacon grease or Kerrygold Irish butter. Adds a huge amount of flavour!! You have to watch the Kerrygold as it can burn just a little.. although that's not a bad thing either. Adds a nice little crust to a piece of meat!! My hubby does straight carnivore, and I do a ketovore. Both of us are off tons of medications, we're losing weight... Life is good! Thank you Dr. Berry! Without your wisdom, we may have never found this way of life!!

Fried foods ARE delicious! When you're wanting a "breading", there are several healthy alternatives to 'white flour death' breading. A simple search will have you on your way. We like crushed pork rind w/a little lupin flour, dry mustard, paprika, garlic salt & pepper~ fantastic for any kind of meat- & the occasional broccoli, cauli, mushroom or squash. Bacon grease & beef fat are where it's at =)

I just discovered pork rind ‘breading’. Made some chicken drumsticks in the oven (it is less mess than fryingj. Even in the oven it was just like fried chicken, I think because of the extra fat in the rind. I am not one to go for keto ‘lookalikes’ because they are either awful or they are a trigger for my carb addiction. This was neither.

@@telih I also had problems with the pork rinds that were fried in anything other than pork fat Telih. I bought several varieties until I realized that what was making me sick seemed to be the combination of fats that my stomach was not keen on. When I tried it with plain pork rinds that were cooked in only pork fat- no other ingredients on label- I did not get sick from them. I also use about half the amount of crushed pork rinds because I mix them with either lupin flour, or a little coconut flour. Might be worth a try for you as well.

I used lard (and bacon grease).. but found that due to what they feed pigs the omegas were not as low as you think (Omega 6 can pass up the food chain). I got a bucket of grass fed tallow on Amazon and I don't know why you would use anything else. PLUS grass fed tallow contains vitamin D and K. If the lard is pasture raised then it would be a good option.. but most of the lard/bacon I see for sale don't make that claim so they are probably fed soy or some other high omega 6 diet. Grass fed tallow blows away coconut oil.. or any plant based oil.. when it comes to the vitamins that come along for the ride.

You are correct. Majority of pork you find for sale, unless it’s a private supplier, feed their hogs and chickens soy meal, ground corn...best to purchase from small farmers or those who specifically sell grass fed. We raised hogs that were only fed dairy and produce-fruits/veggies to ours. They were very lean hogs because they were allowed to be outside and we were small. Our cattle are on pasture ground all year long with oat/pea mixture hay, silage, and beet tailings. We also make sure they have access to mineral tubs all year long that have probiotics mixed in. Gut health is just as important in animals as it is in humans 😉

Ken you forgot about the fry pan or skillet you use.......non stick coatings contain PFAS and other poisonous chemicals so it’s best to use carbon steel or cast iron pans. I only use lard to season my pans with, some manufacturers recommend finishing oils like flax/linseed oil but these polymerise as you heat them and coat the pan surface thus making the pan non stick.......... is this polymer safe? natural fats are superior plus many seed or nut oils contain large amounts of glyphosate weed killer.

I'm puzzled by this video. I have always been told to avoid Lard, Beef Tallow etc because of the fat content, and told by experts that extra virgin olive oil is the healthiest of all oils. I find it hard to understand how Tallow and Lard are better. I don't believe it.

@MrArgent11421 So there are two camps here. Camp 1. says saturated fats (coming from animals) are bad and raise bad cholesterol and raise the chance of heart disease. Camp 2. says that saturated fats are the most stable (because all the carbon atoms are bonded to hydrogen) and therefore less reactive and less likely to go bad and overall better for your health. Camp 2, by the way, also would say olive oil (which is mono-unsaturated) is okay in moderation, but to avoid poly-unsaturated as much as possible. Camp 1 makes it's claims from various studies that link an increase with saturated fats to an increase in heart disease. Camp 2 claims that those studies have issues-like small sample sizes, cherry picking, not publishing results. And it's true, ancel keys was the guy who first claimed saturated fats were bad but he didn't include all of his findings in his reports. There was also a study that found that saturated fats from milk had no negative affect and it was purposefully hid away for 40 years until the researcger's son found it. Camp 2 will also point to indigenous cultures relying heavily on saturated fats in their diet but having no issues with heart disease. I think I'm leaning toward camp 2 but I'm still trying to figure out, because It seems like everyone backs up their claims with correlative evidence. I want. To know what the fats actually do inside our body.

Hey Doc, most of your videos are great! However there is one possible key point you missed im this video. Namely what about the temperature you fry saturated fat in. You mention oxidation of IE vege oils like olive oil at high temperature. But no mention of saturated fat high temperature damage. What is the acceptable temp. range for saturated fat? I mean there must be some point as in a slow & low rendering, vs frying, vs running the fat thru a "blast furnace" per se?

That would be OK. The problem is combining seed oils with high-glycemic carbs like wheat flour. The cholesterol in the bloodstream becomes glycated and is incredibly inflammatory. Mixing carbs & fats is the culprit.

A wealth of info in this short video. Thank you, Dr. Berry. I am getting rid of my olive oil and will use my coconut oil exclusively when frying (or airfrying) my meats. Just ask for lard at your grocery stores. It may be refrigerated or it may be in the baking aisle or in the oils section

have you tried eating every 3 hrs, small meals, balanced protein, carbs and fat. if your blood sugar is balanced, you will not feel like over eating and your mood will be stable. please try not to think you are "bad". most people who struggle with overeating are not "addicts". Emotions are the most common factor in all disease.

palm oil is very processed from pulp of the fruit of a palm tree- considered a processed vegetable oil . Skeptical as a keto oil- it may have less carbs

Yes,I teach my clients to watch for the bad oils. Avocado, coconut, ghee for frying and olive oil and butter for sautéing. Fried eggs in ghee is wonderful fast. We are getting a delivery of meat from our local farm today. Tastes so much better! Use almond flour or pork rinds and parmesan cheese are good breading if you want the breaded fried foods.

I had my gallbladder removed about 13 years ago. I started eating keto about 3 years ago with no real issues. Are carnivore and keto diets ok without a gallbladder? Any supplements I need to be taking?

Your liver is still producing bile. Without the gall bladder it either drips into digestive system steadily or sometime the duct forms a small balloon shape and can hold a small amount of bile. There are also lipase enzyme supplements.

Aside from the oil that we use, in my understanding, when we fry oils and fats, and overly hit them, even if they are quality, we are essentially putting it through the process of hydrogenation, as that is what is boiling through these oils, thereby damaging these fats which are now resultingly inflammatory and create a cascade of other negative health issues in the body. It seems to be healthiest to cook and heat these Foods, oils and fats as gently as possible, so that they are not damaged and thusly damaging to our bodies.

I do avoid fried food. Most are heavily breaded. Example chicken nuggets. Oil use for frying is usually soy oil or other unknown oils. Fried fish is always breaded.

What about peanut oil? Otherwise can you advise on what oil is the "best of the worst"? I personally cannot afford to fry in avocado oil or coconut oil. Ive heard peanut oil isn't quite as bad as some of them you mentioned. Looking for something that maybe isn't great for you, but isn't going to greatly damage your body. Thanks in advance.

@@tylerward4259 I’m in the UK so I don’t know about US shops but here we can buy a 9 oz block of basic lard for about 70 cents, organic is 3 or 4 times more expensive . If you can’t find any at a decent price you could try saving the fat from fatty pork joints such as pork belly, just cook in a low oven for a couple of hours and the fat will render out, sieve out any bits and store in a jar in the fridge, it’ll keep for ages, you can use this method for bacon, beef, chicken they’re all very tasty and good for making sauces and gravy. I hope this is of some help, best of luck......keep safe.

I would LOVE to see Ken Berry reach out to Butter Bob Briggs to see how he is doing & to do an interview :) Butter Bob Briggs had a huge YT & FB following & he was just a regular guy, factory worker who lost like 150 pounds on a LCHF diet & his video's were very basic but awesome,... He just stopped all of a sudden after he got a Coronary Artery Calcium score of 19. He said he needed a break but just stopped,... I think he did one more YT video after that but the he stopped everything,... Would be great if Dr. Berry could find him & I believe he lives in Tennessee or Arkansas.

Well, now! This is different. I've had a heart attack and the medical industry does say not to use all the oils he's listed. However, they do say to use olive oil. Use it directly on salads and even fry with it. So if it's not good why then have they told me to use it??? Lard? I was specifically told to never use lard because it has so much cholesterol and fat in it. Same with bacon grease. No one ever said anything about the other oils he's mentioned. Interesting. Maybe the cardiologists don't exactly know what they're talking about. Something is one off somewhere. 🤔🤔🤔🤔

I would add shallow frying technique is a more appropriate technique with the correct fat vs deep frying * very costly to deep fry in beef tallow where the food (meat) completely submerged

The old / good flavored McDonald’s French fries use to be fried in beef tallow before the government forced them to switch to soy oil. Think what it cost to fill their fryers!

I love kentucky fried chicken... what is the oil they use? they say in marketing ads they have changed oils several times to be healthy but no one can say what they are using for sure! Kentucky Fried Chicken (KFC) uses low-linolenic soybean oil (LLSO) for frying their chicken, which is a zero trans-fat cooking oil. KFC switched from partially hydrogenated vegetable oil to LLSO in 2007 after a two-year trial of various oils. ?????

thank you sir for your informative videos, i'm now 27 and since the teenage years i took good care in what to eat since in my family food had to be delicious not healthy, the fact about lard and other natural facts is surprising to me since i was always thought that those are to be avoided. Now i understand better. I come from romania, i grow up in a rural poor part of romania and i remeber well my grandparents were eating lots and lots of fat, since they didn't have fridges they grow pigs in the worm seasons, then in winter cut them and store the meat in lard so it wouldn't spoil, and that was the main dish during winter, meat cooked in lard and i never heard none of my grandparents generation dying from a heart disease, on the other hand my dad generation now in thei 50's suffer from heart diseases many of them have died in their 50's and something tells me it's not because of the lard but brecause the diet has changed to more processed foods
