@Lassi Kinnunen re every way of making ice cream is difficult. - - "not so fast" Last night we unearthed a "freeze it in advance" cup for making a half-pint of ice cream with box and recipes. The recipe for orange sherbet was orange juice. Full Stop. That can't be difficult. ( History note: Full Stop as an expression came from some old days of telegraphs with no punctuation. ( I don't know why..) - Stop meant end of sentence. - Full Stop meant end of message.

He did say “easiest”, not cheapest. If you want the cheapest, you literally have to just leave the custard in the bowl, put in the freezer, and take it out after like 15 or 30 minutes (I forgot), and stir it really well. Then you have to keep repeating that until it’s the consistency of soft serve. It takes like WAY more work and time, but it’s cheaper.

Karpa Koi Use a bowl surrounded in ice (big bowl plus smaller bowl). Put salt on the ice, which actually makes it colder, and stir the ice cream mix until the consistency is to your liking. It will take a while, and you will have arms of steel by the time you finish, but it works. You can also use two differently sized bags, with the same overall principle. This time, you’d knead the bags rather than stirring until the mix reaches a consistency to your liking.

Made a no-machine, peppermint variation of this and it was awesome! For the flavoring, I skipped the steeping step, heated the milk/cream/sugar, tempered the eggs, added the tempered egg mixture to the hot stuff, and then made the custard. Once thickened, I strained it into the cold cream in the ice bath per Josh’s instructions, then mixed in about 2 tsp vanilla and 3 crushed candy canes. For freezing without a machine, I added 1/2 c salt to the ice water in the ice bath, stirred for 10 minutes, let rest in the freezer for 30 minutes, and repeated the 10-minute stir/30-minute freeze 4 times. After the last stir session when the ice cream was a loose soft serve consistency, I put it in a ~1 qt storage container and let freeze for about 6 hours, mixing at around 4 hours to incorporate the more- and less-frozen parts.

I just made this with the "Whynter Ice Cream machine." It turned out super good, even though I think I cooked the eggs a little too quickly.

I bought a compressor ice cream machine - not as cheap as the gel bowls but still a decent price, not major manufacturer - it's bulky and heavy - & one of the best things I ever bought. You want ice cream? Ok, it's ready an hour later. I also *always* have an over-stuffed freezer, so the whole bowl-in freezer is a pain. Thanks for the custard version, Josh.

Uh, Joshua, I think steeping you’re own flavors and tempering a custard immediately exempts this from being “the EASIEST way to make ice cream”

Ok, summer is coming soon, and we're all quarantined, so I crave for sweets more then ever. I don't need an easiest way to make ice cream, I need the cheapest way. Lol, but seriously though, great video ☆☆☆

I didnt have an ice cream machine so i extended my refrigerator and put a chair in there and mixed the ice cream by hand. The cardboard extension collapsed, therefore it knocked me into the freezer. The load of cardboard made the fridge door stuck, so i was gonna be there forever. I sat and ate the ice cream and now im typing this comment before my phone freezes. Thay was some tasty ice cream though

This is a good recipe to get started. I eventually pivoted to a 1:2 milk:cream ratio (as opposed to the 1:1 used here) with 1.5x yolks.

Just a heads up for people. For this recipe, don't use fruit as flavoring. I added in strawberry puree in place of coffee beans, and I'm pretty sure the fruit just burned. By the end, the ice cream was a deep brown color. It actually looks like I made chocolate ice cream. And it mostly just tastes like sugar and eggs. If I do it again, I'm gonna try to cook the base with no flavoring, and add the strawberries after its frozen. And maybe do 4 eggs instead of 6, since strawberry is a more mild flavor. Cuz it really just tasted like eggs.
@wokebear77972 жыл бұрын
Bro you don’t have to cook the strawberry purée, just add it cold - he only did it to extract the flavour from the coffee beans by brewing it
@dirtyketchup2 жыл бұрын
🤦🏼♂Ya, dude. Just make the base and then stir in the flavorings after you've taken it off the heat.

Careful for anyone who wants to add different flavors to the base. If the things you’re adding are prone to burning, it may be better to add them at the end after the custard has boiled. I tried adding strawberry purée to make strawberry ice cream and the strawberry got completely burned. Turned all brown and lost almost all of the flavor.
