Once again, here's Albert showing me that even though I only have a few ingredients, and no oven, and I'll probably have no electricity for a couple of days, I can still make something delicious and satisfying! Today and this week is more challenging than usual. I live off-grid in a wilderness area on a mountain in S. California, my nearest neighbor is 2 miles away, and because of the heavy rain for several days, our dirt roads have become impassable. I probably won't be able to leave the ranch for at least a week. I haven't been able to go to town for supplies in 3 weeks, but I've got a bag of Yukon gold and a bag of red potatoes. I've even got the smoked paprika, olive oil, and garlic (staples in this house!). I'll have to substitute rice vinegar for the white wine vinegar, but I think it will still work. My adult son and I live pretty rough compared to most in our community. We have no heat except for electric space heaters that we can't use on cloudy, rainy days. All of our electric is from solar/wind/batteries, and our system is 20 years old and not working optimally anymore, and I can't afford to replace it. Our house is miles from the grid, so we can't get "normal" electric power. We are using candles and an oil lamp for light today and until the sun comes back. I find it gratifying that even when the weather is so bad that I can't leave the house, I can still cook something really good! I'll just pretend I'm living in the 19th century, cooking by the light of a hurricane lantern! 😃 I have loved every dish of yours that I've tried and I wish I had known how much I would love smoked paprika years ago! I'm starting to wonder if I was Spanish in a former life, ha. After seeing video of your beautiful country, wonderful people, and tasting your traditional flavors; I wish I was Spanish in _THIS_ life! Thank you Albert! I'm looking forward to making this tonight. 🤤🧑🍳❤

Last night in San Francisco, 02-04-24, from 4:00PM± to 11:00PM±, we had an electrical blackout leaving half of the City in the dark. For dinner all I had was a cold can of beans, cold cheese, cold bread, and cold olives. Today, February 04-05-24, I have *_HOT potoatoes_* for dinner, thanks to my hero, Albert, and *_Spain on a Fork!!!_*

Same here! Every one of his recipes I've made came out so good, I couldn't believe it was something I made (lol). Albert doesn't just tell us how to make a recipe, he teaches chef techniques that make all the difference in the final results. I never knew about salting vegetable slices and putting them on paper towels (such as eggplant) to draw out excess moisture. That made all the difference in the texture and firmness of eggplant parmesan. It's not suppose to be slimy and mushy, and now that I know that tip, it never will be again! I also learned from Albert that the time to use that freshly ground black pepper is at the final stages of cooking. I was just throwing it in at the same time as other spices, where it got lost and overpowered.

Great, simple recipe. Thanks! My Cosori Dual Blaze air fryer does a superior job with potatoes cut this way. I lightly coat them with EVO and use the French Fries button, which cooks them perfectly, to a nice crispy golden brown, perfect for this recipe.

Another great video! On my recent visit to Barcelona to visit my wife’s family (who are originally from Ecuador), when we’d go out to eat, someone would always order Patatas Bravas….I got weird looks when I asked for papas fritas or papitas….its not like no one knows what they are…even the server. Bravas are alright as long as the mayo is on the side (I don’t like mayo) and not slathered all over the potatoes.

This has nothing to do with the recipe in this video, but I had an Uber ride with a woman from Valencia, Spain to my hotel in Champaign, Illinois of all places last December. It was the first time I heard it pronounced "Balenthia". I get educated in the most unlikely places. Ironically, I was (and still am) planning a trip to Valencia this year. (I've already been to Madrid and Barcelona.)

Great content as usual. I run my whole cloves of garlic in the microwave to kind of blanch them to knock out some of the fire the garlic adds to the aioli.

Before knowing more about spanish food, I for some reason always thought, that there are tomatoes in the sauce, so stupid ;-). What makes the bravas from Barcelona different to the ones from Madrid ? I dont see any difference, do I miss something ?

Some people like to add tomato to the sauce, in Madrid they don't add aioli over the potatoes, just the brava sauce, the aioli part was invented by the Catalanes! Much love :)

Looks great but the recipes I’ve seen before boil the potatoes before frying and the bravas sauce also has tomato in it. Is it the lack of tomato that makes it from Barcelona?

Genuine bravas are fried twine at different heats (low, high). Boiling is a shortcut. The result is often OK but not the real deal. About the sauce, it's a question of taste. The all i oli makes a difference as my understanding is that in Madrid it isn't served with bravas. No idea why he said this in from Barcelona. In Valencia they are served exactly the same way.

Yes they serve them in Valencia just like this, I would know, I live in Valencia, however, the Catalanes are the ones that created this style of patatas bravas, hence the name of the recipe :) Saludos!

It’s breaking my hart how effectively you are scratching the pan with metal. Not professional. Don’t you have money to buy a silicon or wooden spoon. The cost of this “cheep” potatoes should be more, because every time you cook it according to your recipe the new pan is needed.

I'm confused. Chef James Makinson also from Spain did a completely different Bravas sauce, based on tomato. The ONLY common ingredient is paprika. I'm pretty sure there are different versions, but this is just too different.
