@@paulg0170 Man, any respectable discourse is completely vanished on the internet. I love his content. I think his videos are well crafted and his skilled is insane. That doesnt mean I cant see a place for improvement in his production. Its been noticeable when he does these challenges with large bowls that we cant see the food. This whole notion that he has 1.5m followers so he cant be fallible is absurd.

The fish sauce you get at a Vietnamese restaurant is not straight out of the bottle you find at the market, it’s nuoc cham/nuoc mam, seasoned fish sauce - more like a dipping sauce. It’s delicious!

It's not fish sauce (though it has fish sauce in it). It's made of fish sauce, water, lime juice, lightly browned sugar, thinly cut carrots, garlic and chili. It's called nước chấm.

Chopsticks are a must for noodles, makes it so much easier to eat them. And a good fish sauce, like most actual fish, shouldn't taste "Fishy" as that's normally a sign on fish not being fresh

I don't really get how chopsticks can carry more noodles to the mouth than a simple fork. For me it's impossible to beat a fork in that sense.

The fish sauce isn't JUST fish sauce. Assuming it's like what my grandma used to make when she made spring rolls (both which she learned from a couple FOB Vietnamese ladies renting a room next door), it's fish sauce base with sugar, garlic, shredded carrots, and I think vinegar. Think of it as a vinaigrette or dipping sauce.

Fish sauce is like soy sauce, but with fish But this is diluted fish sauce with sugar and vinegar (because fish sauce taste like salt consider the amount that they use to make it in the first places)

I went to my local Viet/Thai place and ordered a bun bowl (bun being those vermicelli noodles) ... not challenge sized, but big enough - couldn't finish. That sauce tho ... put that over ANYTHING. Utterly delicious.

In all I want to say your eating technique with the noodles is perfectly fine. And Asian cultures especially in southeast Asia Japan and China slurping or eating noodles like that is perfectly acceptable. The main reason why is so you can take in all the flavors that the chef had prepared for you because it goes across the entire taste buds.
