Those ribs you can slow cook 'em "a la estaca", best techique we have in Argentina with the tools you have to cook on a trip like that. The Entraña, high heat 4 mins each side on that setup is ok! Love your content Steve, thank you.

A pre-boil on those ribs, then the cooking method of choice and I bet they would be tender. Learned that years ago when dealing with a tougher animal.

Was that bear undercooked? I know Steve's history with trichinosis. I don't hunt, but I do a lot of cooking. Would it be unreasonable to bring an instant read thermometer on these hunts?

@@TommWayfarer ya your rite i guess i was just thinking of my area and not the whole world. They stopped letting people hunt cougars with dogs and now the woods are way different than they used to be. My family grew up on deer and and and sturgeon and now they might not even go hunting cause there's no deer left. And now we cant keep sturgeon because the sea lions are killing every fish they see but were not allowed to shoot them. Libtards think humans shouldn't be a part of the natural food chain.

That's cool you were in the Tok area. It's kind of mind-blowing just how large those management areas are. Like I flew into Fairbanks last year to fight a fire that was in the Tok management area in a village called Fairway, which is still loosely called Tok. The amount of huge sheds out there in the valley is almost overwhelming. I think most of the game stayed away because of all the bears though. The whole two weeks dropped in with no access to civilization, we saw no moose, elk, deer, or caribou. Just bears. We finally saw a moose driving out on highway 2. The whole time, I just wanted to be in the Yukon or in the Brooks Range with those giant glaciers you can see flying in. That terrain looks a lot more bearable than the tussocks.
