I made your penne alla vodka legitimatley today for both my family and a close family who has a parent who has been having a tough time dealing with their battle with cancer. The entire time making it I felt so at peace with the process and loved every second of prep, cooking, and assembly. I fell back in love with cooking today, and I was able to feed friends in need the best, most comforting food I have ever made in a long time. Thank you very much. I know this comment is two years old now, and that you were just giving the highest compliment to the chef of this video, but I think the "probably" is very well deserved. The amount of absolutely amazing vegetarian and vegan sandwiches that are currently being experimented with right now is amazing, many of them blowing this one out of the water in terms of deliciousness and satisfaction. It seems that these days people are finding so many new and exciting ways to use plants almost every day. I'm not a vegan or vegetarian, but for the past month I've been accidentally free of animal products by just trying out different vegetable based recipes that have been insanely good. Better than their meat counterparts. I can see why more and more people are happy to go vegan now. I probably will myself.

I keep coming back to this recipe every time we have guests over! A tip for my vegan friends; sometimes I leave the egg out of the recipe and mix water and flower instead to make the bread crumbs stick to the egg plant. It works just the same! Thanks a lot for sharing it!

Looks great! Especially if I'm frying I try to use a sauce with no oil: I like a 3/2/1 sauce 3 parts balsamic (or other) vinegar, 2 parts mustard of your choice, and 1 part maple syrup, and shake! It stores well and is so good.

Try chickpea flour or "besan" flour mixed with water! It's great as an egg replacer for breading and frying, i use it for vegan fried chicken or applications like this. Super cheap at a middle eastern/indian grocer :)

My husband and I made this last night, but with zucchini since that's what we had. It was AMAZING! We even made the roasted peppers first. We changed it up with a smear of pesto mayo on the bottom bun and then sandwiched mozzarella between the slices so that the heat would melt it a little bit. SO GOOD!

This looks like a great sandwich, but the best vegetarian sandwich is made a Chickie's Deli in South Philly. It is really similar; I think you just need to switch out the burrata for sharp provalone and add in some garlicky broccoli rabe.

My Nana, one year it was her birthday and at the time I was carless....I lived in San Diego and her in LA. I wanted to celebrate with her but had no way to get up there. She was in her 80s and no longer drove, luckily I had a friend that was willing to go up there with me and celebrate. I told her we were coming and we'd take her out to lunch, she insisted on cooking which any Nana would...I told her ok but my friend is a vegetarian are you sure? She said it would be her pleasure(God I miss her) Anyways when we got up there she made this beautiful Italian meal of eggplant parm over spaghetti....it was great, it truly was but what was awesome is it was covered in her homemade Bolognese. See she was born in 1924. To her this was as vegetarian as it got. Thankfully my friend was a good guy he ate every bite and told her how delicious it was and we just smiled. Watching this video reminded me of this moment and I just had to post this....it looks like a great sandwich!!

I made this for lunch today for me and my wife. Bit of a project with making the peppers the day before and I also made the bread myself which of course you don't need to do but good bread is a must. A few small modifications I can recommend. I added chopped shallots to the vinaigrette. I also added some hot peppers for my wife who likes her food spicy. Oh and I added some thinly sliced tomato which made it even more juicy. Thinly sliced sweet onion would also be a nice addition if you had some. This is a great sandwich. I've made this eggplant sandwich recipe a few times now, and it's absolutely delicious. I also used Joshua Weissman's focaccia recipe for the bread. The only thing I changed about the sandwich contents is I toss the balsamic dressing into the arugula, which reduces the "dry arugula" texture. The balsamic is what ties together this sandwich's flavor profile so you can't skimp on it.

This looks awesome, man. When replacing meat, it's good to have the taste, as you have here w eggplants. But the more challenging part is the protein thing. Eggplants can't replace it : 1 g for eggplants for 100 vs about 30g for chicken breast... Peas, beans, lenses and nuts do the job pretty well for vegans. For vegetarian eggs and cheese do the job perfectly indeed. Burrata has 18g per 100 and you put a whole lot of it, so at the end of the day, you both challenged the taste part and the protein part. Bravo

Im not even all the way through this video and ive already learned three things. 1) Make your second coating of breading dryer than the first to make the final product crispier 2) When you get a bubble in your cutlet its usually a sign of the oil being too hot 3) When you have a little uncooked spot on the cutlet, throw some oil on it Impressed!

I was skeptical of this being the best veggie sandwich. I made it just now and man, you hit it out of the park. It really is amazing. and I'm not a big veggie sandwich fan. only difference was i didn't have dijon at home and used dusseldorf german mustard. and i didn't have the good real quality maple syrup and used the Aunt Jemima stuff. But it was amazing. Truly a great job and yes, you may be the sandwich king with this one.

Good food is all about contrasts - not just flavours, but textures like soft & crunch (and if you stray into other cultures, you can learn why the gelatinous crack of chicken feet, makes sense to the Chinese (although I still stand by the most populous nation on earth, all being wrong)). For meat eaters take thatfried eggplant slice put on hero withdeli ham Genoa salamislicedpaper thin provolone cheese roasted peppers take your pan you fried eggplant in drain oil leave the breadcrumbs that settled in the pan now add small can of tomato sauce heat use that on sandwich you could also add some mustard to bread before you start building sandwich build 1st ham 2nd salami 3rd provolone 4th eggplant 6th toasted red pepper 5th tomato sauce top of bread enjoy we used to have these when we went on picnic iced tea goes great with it

This eggplant sandwich is really good. I especially like the balsamic vinaigrette. The flavors compliment so well and is a nice change from mayo based dressings. My first time mixing panko and regular breadcrumbs and it does add an extra crunch. Thank you for sharing another great recipe and I look forward to trying more!

thank you for this recipe, I made it 2 times and it is glorious. I always put some pickled red onions on it too. It made me appreciated eggplants for the first time ever, it was always one of the very few vegetables I didnt like. Now I started to use it for cooking. the vinaigrette and roasted peppers are so good as well, I feel really stupid that I have never tried it before. And this video made me a fan of your channel as well :D thank you again!

I'm about to make this sandwich with the only swap being that instead of the vinaigrette, I'm making a roasted pepper pesto using some of the jarred peppers (I made a double batch :D) that I'll use as the spread instead and I'm... stoked. Thank you for the recipes and guidance! :D I can't wait to actually try it

@@lydiapetra1211 oh for sure! I made the above roasted pepper recipe and added oregano and a number of extra cloves of garlic to the jar in with the EVOO. Ingredients: 80g of nuts (I used a split between cashews and pine nuts - 40g of each) 1 generous cup of the marinated roasted peppers 5-8 Basil leaves, to taste Salt Pepper You can do it by hand but a food processor will make it take all of 2 minutes. Pulse the nuts in the food processor until they reach a sandy-like texture. (Don't go too long or you'll start making seed butter XD) Add in the cup of marinated roasted peppers (1- I made sure to get lots of slivers of garlic, but do what makes you happy and 2- bring a lil bit of the infused EVOO with the peppers, a couple or few tbsps will do) and basil leaves and blend until you've got a lovely red-orange pesto. Add salt and pepper to taste and then I stir in about 1/2 cup or more of fresh grated parmesan. So freaking good on pasta or used as a dip or spread, I promise you. I got the recipe from a KZbin video which I could just give you but it's entirely in Italian which I don't know how helpful that would be to you :)

Just made such a sandwich but I bought the eggplant already cooked at the supermarket. Done very well. 1 slice of eggplant, tomato, tartufo cheese, arugula, sweet peppers, mayo, salt, pepper, reduced balsamic vinegar. It barely fit on the roll.

Well done! Yesterday I used a liberal amt of vegan mayo, roasted spaghetti squash (seasoned with sage,garlic granules, onion flakes), cherry peppers, kalamata kale chopped up, sprinkle of red onions. All of this was on a delicious Whole foods semolina/sesame seeded hero. Salt/tri color pepper too. It was pretty awesome. :)
