The Kaiju are classified into different types: Yoju, Honju and Daikaiju (and a 4th one but that's a spoiler). Yoju are the smallest and weakest, Honju are bigger, stronger and the most common, Daikaiju are the true Godzilla-level threats. The Kaiju in this series kinda work like earthquakes, as Yoju will typically spawn near Honju, similar to how earthquakes can leave behind aftershocks.

So a little bit of world building information since I don't remember when it's explained in the manga. The kaiju are separated into different size classifications from smallest to biggest being Yonju, Honju, and Daikaiju and there are many of each species within these classifications which is why the clean up team is so familiar with the anatomy of them. Then the numbered ones, like Kaiju No. 8 for example, are the uniquely strong and/or intelligent Kaiju that are dangerous enough to be designated as a special threat. They're sort of like the boss or raid monsters of the series since there's only one of each numbered Kaiju and it can take entire divisions or more to take one down.

If you think about it. If given the chance, the clean up crew would probably one of the most lethal and effective units in the force. Cleaning up this mess everyday would literally give you the muscle memory of where the organs are located down to the tiniest and most critical one. Taking it out without wasting too much resources.
