My Dad goes into food plants all the time for his work. He went to a pork plant and the McRib came up. They told him that it takes most of the year to build up enough inventory of pork for when the McRib comes out and then McDonalds comes in and wipes out their inventory.

I used to visit McDonald’s 2x a week. As the prices rose, I realized going to my local diner was almost the same price, the food was a bit healthier, the menu is bigger, and I got served.

Every fast food place nowadays think that they're bougie enough to raise prices and blame it on "inflation" and "minimum wage raises" while they continue to serve the same unhealthy, small portioned slop. "Restructured pork"... As a fomer meat cutter who worked in this industry for 24 years, the term "restructured" means emulsified. Little bits of every part of the pig are ground and mixed with water into an extremely smooth paste. It is seasoned and then injected into the rib shaped mold, formed, cooked and then flash frozen. The same thing goes for boneless hams. Ever wonder why when you have a boneless ham sliced you sometimes see air bubbles? Pure muscle meat doesn't have air bubbles. Boneless hams are made the same way. Ham ground up into a paste, water and seasonings added, the paste is injected into those football shaped ham molds and then cooked. That's what it is and how its made.

General Mills has the same issue with their "monster cereals" (Count Chocula, Frankenberry, etc.). They realized that they could make just as much money by selling these Halloween cereals as seasonal items for just 2 months out of the year as they could selling them year-round. As seasonal items, they get premium shelf space, more focused advertising, and elevated customer excitement. McDonalds has the same result with the McRib (although I also think the pork price thing is part of it as well).

I think you pretty much nailed it. The only other thing that comes to mind is the psychological phenomenon where inconsistent rewards leads to greater addictiveness. Like slot machines or scrolling on a social media feed. If consumers knew exactly when to expect the McRib every year, it wouldn’t be as exciting and hook them as well. Also the idea of “this may be the last time the McRib comes around” also contributes to the need to get it while you can.

I heard it wasn't because of the pork prices directly but rather the supply of pork. I don't know if it's true but basically what I read was that McDonald's can only offer the McRib if there's a pork surplus because they need so much of it to be able to offer it nationwide. Like a big part of how McDonald's determines its menu is by availability of items because it has to be at EVERY McDonald's if they decide to put it on the menu they're really limited by things that they can get in huge quantities.

It does have a lot with price and supply but what drives the prices down and increases supply on pork scraps. The holidays, in late spring they start producing tons of hams for the up coming holidays. This increase the amount of scrap meat and the slaughter houses must do something with all this extra scrap meat. McDonald’s steps in and buys scraps at discounted price so they make the most profit. Depending on the market supply of hogs determine the time the McRib hits the market. In a year with tons of hogs the prices drop sooner. In a year the hog market it tight the prices drop later. Blame your Christmas Ham for the McRib.

In Holland there's a deep fried fast food item called the "mexicano", which has the EXACT same shape as the McRib. These aren't sold at McDonald's but rather at independent fast food vendors (known as 'snackbar' in Dutch). They don't taste like BBQ but rather have a "spicy" (generous use of the term) taste.

The McRib oddly enough is based on the chopped formed rib patty originally formulated for military dining facilities and hot field chow they still served today, albiet with a different bbq sauce and on rice not a bun. The ribs are packed and served from what is known as a "Squad Tray" they are also available in this form in the freezer section of many US grocery stores, sold under the On-Cor brand.

Like other commenters already said, it's a permanent menu item here in Germany. Pork being way cheaper than beef over here might be a factor. I have it a few times a year, definitely less than 4 or 5 mcribs a year and honestly when I have it, it slaps. It's tender and the bbq sauce adds the needed sweetness to the savory pork patty. It is just such a mess to eat and I think I would grow tired of it really fast, it tastes good because I rarely have it I guess. That fact combined with it being up there with the most expensive burger on the menu keeps me from enjoying it more often when I can get better burgers for the same price.

@@agonefire Actually McDonalds has very strict control of processing and flavoring almost assured that any restaurant in the world you go to it going to have the same flavor for the same menu item. There are some differences, Japan uses the original McNugget process. This also has a drawback as it makes it more expensive food in other countries. The US$17.99 McDinner Box in the US would be close to US$40 in Norway.

I swear to you. If you got what I got just one time you would never have another shamrock shake. This thing was PINEGREEN - WINTERGREEN. I hadn't had one in Awhile and thought it would be fine maybe even tastier. It was worst than a listerine altoid mentos shake served on a bed of cilantro. It tastes much like what it was supposed to be to me, a replacement to the chicken nugget... so basically a big pork nugget that, instead of being breaded and deep fried, is regular fried and slathered with that special BBQ sauce as the meat of a sandwich. Their killer app are those crispy fries.

I remember when the mcrib was supposed to be a permanent menu item in the past 5-7 years, and then no one bought it. Mcrib is just one of those things, sometimes I pass mcdonalds and I'm like "Oh, mcrib is back... Maybe I am still alive and not in a coma in some hospital somewhere, unconscious.". It's just something that happens, I don't mind it disappearing and reappearing.

But for Singapore, this is just one of the "Limited" or Seasonal menu items in the country, there's a variety of seasonal menu items that Mcd releases throughout the year. For example, there's the Prosperity Beef Burger during the Chinese new year season, And the Nasi Lemak Burger(Singaporean/Malaysian) themed burgers during our National Day period. But for Some reason, this japanese Burger will always be back on the menu during the year end period, I believe it's due to it's popularity throughout the years that Mcd Singapore releases it yearly.

this is so interesting to see how this phenomenon takes place. In China, KFC used to serve something called Neng Niu Wu Fang from 2008 to 2012. It's basically a beef pie with the wrapped ingredients containing vegetables, tender beef and specialized Szechuan spicy sauces. Some claims it‘s the best product (thanks to its low price),some thinks it's disgustingly mid. Since 2017, it has been brought back annually, sometimes multiple times of a year, either with "limited time" or "new and better" design. Every forum goes crazy and flood the stores immediately. A true sight to see.

Here in the UK you can buy "Rustlers BBQ Rib" which is basically a McRib in a refrigerated package, if you just throw them in the Microwave they are not that great but if you spend a little time to heat the patty in the oven or grill with the sauce applied and warm the bread for a few mins in with it, maybe lightly toast it they are great. Very close to the McRib, bit cheaper and of course on demand whenever you want it.

I remember the last McRibs I had was back in November. I had to pick up my daughter after school. We normally stop someone to grab a bite. We drove by a McDonalds and saw the sign. I ordered 4 McRibs with no onions (we don’t like raw onions). My daughter asked if the others were for her brother & mom. I told to just eat the McRib. In less than 2 minutes she asked if she could have another one. I told her that’s why I had ordered 4. They were all for us. A week later she asked for some mcRibs. When we stopped at a McDonald’s they were gone. I told her she has to wait until next year. She asked me why and I explained both theories 2 & 3 to her. I believe it’s a combination of both. Marketing genius and pricing. I have a bbq side business and had to stop selling pork ribs for a short time as prices got too high.

I worked at a McDonalds for like six months and a couple months in the McRib came back… I was hype about it but ended up not making myself a single one 😂🤷♂️ didn’t look nearly as appetizing as the monstrosities I’d make for myself on break.

I worked at 2 different McDonalds back in the 80's. One would let you eat anything off of the menu, or you could make your own food. The other location would only allow you a basic cheeseburger & fries or a 6 piece McNugget. We quickly discovered that you could stuff about 14 nuggets into a 6 piece box if you were careful.

I heard it was logistics--just like you mentioned it was difficult for McDonald's to secure a sufficient supply of chicken to make chicken nuggets available at every restaurant, it'd be hard to get enough pork to make the mcrib available year-round. It probably is at least part of the reason the mcrib isn't a permanent menu item.

The McRib is my favorite... It is only sold in small runs because it's made of unicorn meat and you know how hard it is to hunt unicorn.. but bring back the Mc BLT -hot on one side cold on the other..

No one ever mentions that when the McRib was first introduced you could get a packet of Blazin' Hot BBQ sauce to go with it. I remember that it was really spicy, which surprised me because at that time people weren't used to spicy stuff from fast food places...especially McDonald's. I wish they would bring that sauce back because it wasn't just spicy, it had a really delicious flavor too...and it was great with the McRib.

This makes a lot of sense. I love the McRib, although not just from "McDaniels." I can't quite put my finger on why. Pulled pork sandwiches are fantastic, but , making it a patty similar to a chicken patty is genius. Some people I know say, "Why would you eat that? It's gross." I find it funny because they are eating a chicken nuggets or a chicken sandwich. It's the same product, just a different meat... And I love the bbq pork combo way more than chicken.

I'm not a fanatic, but I do enjoy the mcrib and here's why: I eat mcdonalds fairly regularly (about twice per month), and eating the same old menu items is perfectly fine for me but when the mcrib comes back, it reintroduces something unique to their menu. I always order the mcrib when it comes around, not because I have a cult-like obsession towards it, not because it is irresistibly delicious, but because it offers variety to a menu that I order from quite frequently. I am willing to bet the majority of people who eat the mcrib are the same way as me.

One of my favorite sandwiches from McD’s…the last time it was offered in my state it wasn’t available nearby. The closest location serving them was about an hour’s drive away. Drove down there and picked up 8 hahahaha…they were good rewarmed the next day too

I guess the issue is that McDonald's doesn't produce their own pork like they do beef, so they're exposed to price fluctuations. What I imagine would eventually open the door to a regular McRib schedule would be if they had some other pork item on the permanent menu so that it would be worth creating their own supply chain there.

I heard they cook them differently than they used to. They used to cook them in a big pot of sauce, which made them more tender and kept them juicy. Now they pre cook the ribs, sauce them per order and throw it on bread.

I love the McRib, I'll miss it but I can make it at home so it'll be fine. The arbitrage theory isn't a secret, I think McDonald's admits to it. If I remember correctly it's only profitable if they can get the pork at a lower price but the timing also happened to be perfect. Because it's in fall, a couple of months after the summer bbq season it comes out right when some people are missing summer and craving that bbq flavor.

Having a small menu is one of the reasons In-N-Out has a better quality product than other fast food places. The same goes for high end establishments. If I’m at a posh spot and there are only a few entrees I’m confident the food will be fabulous. As for the “ limited availability” it truly is genius marketing. It works for other things too. I performed in Ptown, MA. We’d say it was the last week of shows two weeks before it actually was. Then we’d “extend it” two more weeks. Even though high season ( Memorial Day weekend, last week of June-Labor Day) was over we’d end up having almost sold out shows every night.

Hello, I indeed believe that the 3rd point makes the most sense, considering that pork price/supply in USA isn't consistent enough. In Germany where pork is consistent in price and supply (and is generally cheaper than beef) McRib is on menu at all times. This means that McDonalds does not want to remove McRib entirely, but in USA at least they cannot make it profitable at all times due to pork fluctuation.

It’s pretty obvious that they do it to artificially inflate demand but your stat about the pork prices can’t be a coincidence except for that if you consider that pork prices are probably lower from October-December because of thanksgiving and Christmas when turkey demand is higher.

In Belgium you can get the "Bicky rib" all year round. It uses an almost identical piece of meat in shape but it tastes better and you get 3 sauces instead of just one (but you CAN ask for a BBQ sauce in most places). Mora also had a similar rib style burger here called "Mora Broodje Frikandel" which you can buy frozen. It's surprisingly tasty and actually tastes better than the McRib.

Never had a McRib before, but that graph you showed looks mighty convincing. Its probably the prices thing and by extension a convenient marketing strategy. If it was set every year, than people would know to expect it and they would just grow to feel entitled to it. A surprise McRib coming back is more exciting than something you feel entitled to each year. Then it basically boils down to get it while the gettings good, cause you don't know if it will be 8 month or 11 month or whenever until you can have it again.

While the McRib is a standard menu item here in Germany I can't remember when I last had one, probably 10+ years ago. If it was a special promo item I'd definitely have gotten it more often like the Big Rösti (burger with just a patty, a hash brown, bacon and a sh*tload of mayo). It's just never on my radar, also not on any display screens but on the tiny items list. The Big Rösti is pretty disgusting as well, so much grease and a ton of mayo on top but I crave that thing whenever it's in season.

Anyone remember McPizza? Little personal size pizzas or the McDLT? I remember these both from back in the 1980s when I was just a kid...My Dad always ate the McDLT. It was a quarter pounder served with mayonnaise, mustard, ketchup, pickles, sliced onions, lettuce, American cheese, and two tomato slices. More like a traditional hamburger.

I always assumed it had to do with pork costs. Figured given the time of the year with all the holidays that centre around poultry, the price of things like pork takes a big dip. Producing the mcrib year round might just not be worth the effort profit wise at normal pork prices, but that time of the year in the fall when the prices dip it can be super profitable. Would also explain why the date is not set because they are waiting for the price to drop and that might not happen at a consistent time every year.

I have read comments saying its bad and smells like chemicals but it mainly is just a patty with bbq sauce and it tastes just like that. The smell is just warm bbq sauce. Nothing special

Your first problem is that thinking Halloween is a good holiday. It's nothing more than an excuse for women to dress up as exactly what they are, for one day of the year. Every OTHER day, they put a costume on. So take notes on what they pretend is only a costume. Secondly, stop being so dependent on other people. Figure out what YOU want in life, and do it. Solve your own problems. Whatever is stopping you can be solved. Or you can make excuses and be a loser. If you want friends, you can make friends, but it'll take at least a little bit of thought and planning. Where do your kind of people hang out? At the bars and clubs? At the chess clubs? At the lake, fishing? Figure out who your people are, and start doing what they do. You'll just end up becoming friends with them, by being there.

Same here. I rarely make them at home, but when I do, I sous vide them until I can just pull the bones out and put that directly on a bun with the barbecue sauce, onions and pickles. It's mostly the same thing, just significantly better and not necessarily that much more expensive as it doesn't take that much in the way of ribs to make.

its not 'weird' at all- we can get tender, grass-fed beef here in the US for less than the cost of pork in germany. we have something you'll never have there- huge cattle ranches with miles of pasture. i get publicly-funded food assistance and i eat better beef than your farmers could ever produce. and your products (like cars) are starting to lose popularity here because your labor costs are so high. you guys should prolly start looking for a new gig.

when i used to eat Mcdonalds during the 90s to the 2018's my favorite things to get were: 1. Big Mac 2.Chicken McNuggets 3. Steak Fajita wrap(they sold them for what seemed like a couple years late 80s at the one in Waikiki) 4. Cheesburger 5. Fries 6. Breakfast Deluxe plate(Rice, Eggs, Portugese Sausage, Spam) 7. I don't eat fast food much any longer but McRib was the last 'must have' a couple times whenever it came around on my list. There were a couple McDonalds locations where it was more common to be available on my annual road trips along I80. My enjoyment of the McRib was usually dependent upon the staff at the location on how sloppy they make it - too much sauce, etc. If I can pick up the thing without getting sauce all over my hands then I'll like the thing, if it's too sloppy as in I need a bib and a couple dozen wet wipes I'd rather just go have real ribs at a local bbq joint and be done with it. It's rare for me to stop at fast food nowadays so even when the McRib comes around again I don't buy them any longer.

McRib was the first product I tried at McDonald ever as a kid - and my first big disappointment. I was expecting some kind of spareribs because of what I saw in TV Spots. Never tried McD again for years😂

I used to like the mcrib. Slowly each time, I would eat less and less. Now, with the cost, I'm just like fk it. It's not worth it anymore. But I think it's the ability to get pork at the cheapest cost possible, and exploit it. What business doesn't do this.

I got hooked on the tv show Raising Hope because one of the character was on death row. Her final meal request was a McRib and Shamrock Shake. They could not execute her since the McRib and Shamrock Shake hardly ever come out on the same time. Thanks for the Video

I'm not part of the cult, I don't watch and never watched any mcrib commercials, I hate mcdonalds most of the time. I had the mcrib one day because I was dieting and, ironically enough, the calories for it isn't terrible. I immediately fell in love with it. I don't know if you went to bad mcdonalds or have some weird taste buds, but the mcrib is absolutely delicious to me, and incredibly addicting. The process the McRib goes through might be disgusting, but the flavor, oh the flavor. . . I eat 4 at once every time it comes out. I can eat 5, but that makes me sick afterwards.
