Here is our yummy healthy red lentils soup recipe. It's easy to make and delicious to eat.
Ingredients:
- 1 tbsp vegetable oil
- 2 medium onions
- 6 medium carrots
- 4 small peeled tomatoes
- 1 medium potato
- 4 tbsp tomato passata
- 2 tbsp garlic + ginger cubes (equivalent to 8 crushed garlic cloves and little grated ginger)
- 3L boiling water
- 2 cups of red split lentils (wash throughly)
- 1.5 tsp salt
- 1 tbsp cumin and coriander
- 1 tsp black pepper
- 1 tsp turmeric
- 2 cubes of vegetable stock
- 1/2 lime (or 1 tbsp lime)
- Bunch of fresh coriander
- 1 chilli
