"Structurally Sound, AND Delicious!", Yes, that's exactly what I want in a pancake! Now I know what to do with the Sweet Potatoes I just brought home! Looks amazing, going to chop everything very fine, add bean sprouts to make more pliable, and go a little thinner and wider, but stack them one over the other up high, like a cake, then frost it with a light Wasabi cream cheese, dress the top with very thinly sliced pickled beet roses and pickled pearl onion carnations, and let it set, then serve it cold, sliced into wedges at the table, plated with a side of fillings like slightly warm Sushi Rice, cool Asian Fresh Slaw, Smoked Salmon, Warm Creamy Crab Dynamite, and BBQ and Tempura Shrimp, Pickled Ginger, Pickled Daikon, Pickled Cucumber, Sweet Sesame Sriracha, BBQ and Sushi sauces, to peel off and roll up the thin pancake layers one at a time into little burrito bites stuffed with the fillings, and just roll, dip and eat each layer, in one or two bites, like a juicy piece of Pancake Birthday Cake Sushi! Looks amazing! Okonomiyaki was one of my fave foods when I went to Japan! The best part is when the bonito flakes "dance" on top of a piping hot one :)

I usually prefer dashi stock as the liquid, and I kinda cheat a bit with the okonomiyaki batter mix as I cannot find nagaimo (yam that becomes gooey and slimy when grated) easily for that nice texture. And besides, okonomiyaki is very customisable - add whatever you want~

I just accumulated all the ingredients to make this using a recipe that has bacon. Your recipe looks great for a vegetarian option. Yummy! BTW, when I was a kid, we used to have pancakes (American) for dinner with canned chili con carne on top.

Looks delish! In Japan, lots of folks buy the okonomiyaki powder in a bag. I believe it was basically AP flour, powdered kombu, MSG, sugar, and some katsuo powder with some baking powder for lift. Your formula is much more like what Ma used to make ♡ Glad this recipe is going out into the world to grace the tables of many Netizens, Marion! You keep hitting it outta the park. If we wanted to make it slightly zesty, what sort of spice would be good? Shichimi togarashi? I am partial to putting a few teaspoons of gochujang into my mayo, too. Not even sorry. I've gotten so used to making things spicy (thanks in part to inspiration from youuuu!), I'm always thinking, What would make this spicy?

As beautiful as that was, I'm surprised you missed kicking this dish up a notch. I was waiting for your chili powder at the end with the nori, and the vinegar chili's instead of the spring onion. 😥. You can probably swap in rice flour instead of flour. The batter may be a bit thinner. But you can probably increase the corn starch to thicken it. And maybe lower heat more if possible since rice flour cooks a bit faster.

Everybody who is going to make this needs to get Japanese sweet potatoes in the first place. In the second place I have had okonomiyaki in Japan and this is not anywhere near what the recipe is like or what okonomiyaki is like to eat.
