The Perfect CURRY MANGO🇹🇹

INGREDIENTS: (tsp=teaspoon) (TBSP=Tablespoon)
4 to 5 fresh, green but full LONG MANGOES or MANGO VERT (slice lengthways, and boil in slightly salted water for 20-30 mins OR until soft)- strain- set aside
Vegetable Oil- 3 Potspoons
Onion- 3 tsp or 1 & 1/2 TBSP grated onion
Garlic- 2 TBSP (grated garlic)
Chadon beni / Culantro- 1 TBSP (grated chadon beni)
Pimento- 1 tsp (grated)
Hot Pepper (OPTIONAL)- grated
Curry Powder - 3 tsp or 1 & 1/2 TBSP
Saffron powder / Turmeric Powder- 1 tsp
Whole Cumin Seeds / Geera - 1/4 tsp
Curry leaves / Carapoolay - 4 to 5 leaves
Mathi / Fenugreek seeds- 1/8 to 1/4 tsp
Hot water - about 1 cup
Brown Sugar- about 1 cup
Salt- 1 level TBSP
Ground Geera / Jeera- 1 tsp or 1/2 TBSP
