Ingredients:
Vegetable Oil
1/2 lb. cooked pulled Pork
1 12oz can black beans, drained
1/2 small Red Onion, thinly sliced
4 oz can roasted/diced green chiles, drained
4 flour tortillas
¼ cups fresh Cilantro
1 cup shredded cheese, Jack, Cheddar
Directions:
In a large mixing bowl, add the pork, black beans drained, red onions, green chiles, and cilantro and combine well.
Assembling the quesadillas, warm a large nonstick skillet over medium heat. Lightly coat your fry pan with oil. Lay one tortilla in the skillet, sprinkle 2 tablespoons of cheese on one half of tortilla, add 4 to 6 tablespoons of pork mixture over cheese, sprinkle 2 more tablespoons of cheese over the top of the pork.
Fold the tortilla over the cheese to create a half moon shape. You can cook 2 quesadillas at the same time.
Cook the quesadillas until the bottom are golden brown which is about 2 to 3 minutes. Flip over, continue cooking until golden another 2 to 3 minutes.
