Tip from a Italian American friend, when you’re doing the butter mixture, put it on the plate… smash all the ingredients on the plate it works much better than doing it in a bowl. I cook my turkeys, almost identical to how you’re cooking you that one! And I totally agree on your cooking times. So many people over cooked their turkeys, and they’re terrible, totally dry. Happy Thanksgiving ❤

I tried this turkey method today for our family get-together and it was amazing. I am sort of a "if it's not broke, don't fix it" type of guy, but this video looked intriguing, so I tried it. The turkey was so flavorful and juicy. The juices at the bottom of the pan were so rich that I didn't have to add any bullion-just flour and the best gravy ever. I have a new favorite turkey recipe. Thanks.

Hi Laura, I followed your instructions about the salted skin/24 hour in refrigerator process. No time to go to store, so I made a butter with Good Seasons Greek dressing packet, thyme & rosemary & garlic under skin/in cavity with apple & garlic & lime & garlic (what I had in kitchen!) ...Laura, this was THE BEST turkey I've made in my Life. My husband was happy and I was so impressed with myself 🤣🤣 I'm a terrible cook, this was a great achievement! THANK YOU so much. Happy Thanksgiving! 🩷

Laura, used your turkey recipe for the first time. I had a 12# turkey, I covered it with foil and removed the foil 1.5 hours later. The foil was actually brown around the edges and the turkey tested done - what?! (I don't know if it was the dry brine or the herb butter rub, but there were almost burnt herb patches on the skin.) I knew that turkey could not be done so I put in back in the oven and waited for the "pop" up to happen, which was about an hour later. I let the turkey sit on the counter for an hour before slicing it and it was delicious! Bravo! However, my stock was so salty I couldn't use it to make gravy, I used 2T of salt (1T per 5#). Any idea what I did wrong? Your videos are fabulous! Mashed potato, sweet potato and stuffing were all delicious 👍

I am one of your biggest fans. My mom was a chef to the Hollywood industry. In New Jersey but out of New York on Jersey and all the other areas I have a method of making stuffing that is unbelievable you doing the regular bag stuffing to be the corn bread or whatever kind of stuff and they have a make your own and then you’re adding slices of pepperoni and package to mozzarella not fresh Chris it’s too wet but you really loaded up with what’s the deal and pepperoni it is the most amazing stuffing you’ll ever try try it my name is Cindy. I pretty much love everything you cook. I have been brining our turkey for 10 years. Somehow I have never experienced the turkey being tasteless and I have never had a soggy skin. It is as crispy as it gets. It is beyond moist and flavorful. So, I don’t quite know why is my brine different. But, I could never not brine our turkey. I do appreciate all you do to make things taste great.

For the juiciest turkey, when slicing ur pieces, dip em into the juices before putting them on ur plate. No need for fancy cooking techniques or ingredients, all turkeys will produce juice when cooking, just dip the slices before putting on the plate and say, juicy turkey. Works every time, guaranteed.
