For people looking for savory vegan breakfasts, I would recommend checking out Indian food especially southern Indian. I grew up up eating chitranna(lemon and turmeric rice once a week or more) and that’s just the tip of the iceberg. It’s funny to see the food you grew up with being marketed as anti-inflammatory savory breakfast. That’s all I ever ate! 😂

I've always struggled to move away from a sweeter breakfast to savory (eating sweet potatoes now) but I definitely want to try this recipe! I loved your comment at the end that the "magic happens" for the rice when it's covered for 10-15 minutes after cooking. Growing up, my mother was always VERY specific that the rice came off the stove and sat for 15 minutes. She would stick the pot in the linen closed between the towels to make sure the steam stayed in there. It's a fun childhood memory for me!

Before you pulled out the rice I thought you were making tofu scramble but I'm pleasantly surprised. Wow. I have a huge sweet tooth and always have a sweet breakfast but I had rice with tomato sauce the other day because I was HUNGRY so this came up at the perfect time. Every now and then I would make Kitchari and loved it! So easy on the digestive system. When I saw this I was like “YES!!” 🥳🤩🙌🏼 Just made it, and currently eating it while I’m writing this. The only thing that I would add in order to slightly sweeten this, is to stir in some raisins after it’s all cooked up and let them steam a little bit. For some reason, raisins, and rice just go together in my home be a sweet or savory dish. Love this channel and your recipes. 😋❤️

I'm Trinbagonian, of African and Indian descent, and we often had rice for breakfast, which was really leftovers from dinner the night before. My son the same, and he doesn't eat typical, American breakfast foods at all.

I made it today. I used tomatoes instead of peppers and it was delish! One tip: IF YOU DON'T HAVE LIME DON'T MAKE THIS. The lime juice takes it from "ok" to "damn!!"

I was so excited for this dish saying it was anti inflammatory. Then I saw the garlic. I have lupus, and garlic is a no no for me since it causes flare ups. Garlic has the opposite effect on ppl with some auto immune diseases since it raises the white blood cell count. I might try it by omitting the garlic, but doubt it'll be as yummy as yours 😊

When you dehydrate garlic and onion (or cook them thoroughly) the sharp, volatile sulfur compounds turn into savory ones as they decay in potency. Dry garlic isn't spicy and sharp like fresh, but it's significantly more umami and deep. Layering flavors!

After seeing this recipe, I subscribed. I lived in Thailand and my palate changed. I ate more savory and local foods. I weened myself from western breakfast foods. Unfortunately moving back to home messed up my diet, weight etc. I’ve been eating savory oatmeal, but need another option. Looking forward to more content….

This reminds me of the South Indian breakfast food called Poha. Poha is also the name of the flattened rice one uses. There is no garlic or tomatoes but rather hot Serrano (or Indian hot) green peppers and ginger. It varies widely by region but staple spices include black mustard seeds, cumin seeds, curry leaves, onions, turmeric, and chili powder. Finished with toasted nuts (usually peanuts but cashews sometime appear), fresh lemon juice and coriander leaves. One can search online for the 100s of recipes. Poha is available in any South Asian market or order online - there is a 'brown rice' version too.
