I think the difference between these old battles and the newer formats are that in these old ones, they had professionally-developed recipes from James and the food team. In PIO and other similar off-the-cuff formats, it's all based on what they know themselves.

Thoughts: Jamie: EXCELLENT. clear winner. He went off-character for this one. Rather than INTENSIFYING the flavors of an old favorite/classic recipe, he creates something unique and goes for subtle flavors. He also put more emphasis on presentation. This was a great surprise. :) Baz: A little pedestrian (ham, gruyere, cheddar), but the Sparkler was a fun touch. It definitely made the trio of dishes look more interesting as a whole. This seems like a fun recipe I'd most likely try for a kid's birthday party, though, so thanks for the idea! Also, I giggled a lot because of the dish's name. Mike: I LOVED the flavors he combined! Flavor wise, i reckon that maybe his dish was actually the most interesting. His presentation suffered though. He maybe could have used small white plates or stacked the colors in a more interesting way rather than just putting them on a baking tray. Also, this is the third video in a row I saw that Mike used saffron. This man really banks on his dishes. Literally.

Good assessment, although saying gruyere is pedestrian makes you sound rather snobby; no offense. I agree that Barry's combination wasn't as creative as he usually goes for, but it was a classic and tasty one that focused on the cheese instead of kinda overpowering it like Mike's (even though Mike's is the one I most wanted to taste because I love all of those flavors). Otherwise I agree with what you said.

I was skeptical about Mike's dish when he first described it but when he actually started cooking it, it became the dish I most wanted to eat. Really delicious flavour combination. Jamie's was absolutely gorgeous. Also Ben will probably make a magnificent father based on how he didn't hesitate or even blink at 9:17.

I was inspired recently from binging you guys to try and make a proper béchamel sauce and I can honestly say it’s CHANGED THE GAME!! I can’t believe how easy it is and how much of a difference it makes! I have ALWAYS wondered how people make the cheese sauce that give cheesy pastas and casseroles so good and now I can make it! I literally made a batch this morning and just ate some Mac-n-cheese with sausage and my homemade white cheese sauce! I first made it to go with cheese stuffed tortellini and since the first time I made it like 3 weeks ago I’ve made it about 5 times and can’t wait to try different cheeses and recipes! I gotta work on my proportions a bit, I always feel like I never out enough flour into the butter so I end up putting more, then when you go in with the cold milk it’s crazy how much it like seizes up and thickens! Then I end up having to use a crap ton of milk lol and when I think it’s the perfect consistency I forget it’s going to thicken as it cools. I’ve only made it with Parmesan cheese and honestly the cheaper (well with prices now it’s $5 for a big can) dry grated parm is just as good if not better than the refrigerated fancy block of parm. Anywho! Thanks for the inspiration! There are a few more things I can’t wait to try. Like bay leaves and coriander! I bought some months ago and have yet to have an opportunity to try to cook with them lol. Hopefully soon!

I have a confession to make. When I first started watching sorted food videos I was very confused. Soak raspberries overnight in just some basic balsamic of modena. Remove the raspberries and take the liquid and reduce it with some added sugar and a little bit of salt and make a slightly runnier than syrup concoction. It is an awesome sauce/dressing that goes well with sweet or savoury but goes REALLY well in an ice-cream. It would be amazing with figs and feta in an ice-cream. (as not to waste the soaked raspberries use them in white chocolate, raspberry and roasted coconut muffins.)

Really cool rainbow mac n cheese recipe! My husband and I enjoy watching your videos :) I made the rainbow mac n cheese for him for dinner as a surprise and he was super impressed! We both thought it was very tasty, but I think your recipe might have a typo or two, particularly in the measurements for parmesan and for beetroot. I assumed the measurement for parm was in grams like everything else, and 500 g of beetroot seemed like alot, I added 400 g and there was way more sauce than the others. I had used marinated roasted beets I had on hand though, so they might have been more juicy than the recipe intended. Still super delicious, thanks so much for your videos, they're super fun to watch :)
