I did keto for almost 2 years. I was cleaning up my diet and implementing portion control tactics for a year prior. I have hashimotos thyroiditis and a whole host of issues that come with it including bad reactive hypoglycemia. I almost by my estimate became prediabetic. I'm 5'2 and at my worst weight close to if not over 300 pounds. I was spending 90+% of my time bedridden in constant pain, couldn't even drink water without stabbing stomach pain, had severe migraines that lasted 12-72 hours almost daily. I was very very sick. When I quit keto I weighed 115 pounds and was at that point at least 80% healthy. I left behind complications and have gained a bit back weight wise but overall I'm still getting health improvements by modifying my diet and still staying low carb. I'm on a low fodmap version, no seed oils at all, no unfermented soy and minimal fermented soy. With keto I did well with apples, carrots, potato's, and sweet potatoes in moderation. I still craved sweets but made clean sugar free 2, ingredient fudge cups, berries rolled in granulated stevia, or fermented radish pickles that were sweet and sour thanx to stevia in the salt brine. Yogurt bowls with chocolate protein powder was a staple I did most days as a sweet. Though in winter I made low carb pancakes with protein powder instead of flour and topped those with frozen berries cooked in animal fat with stevia and cinnamon in place of syrup, nuts, and sometimes smear cheese. Id pair with things like bacon and eggs or beef heart cooked like steak with eggs. So many options with keto even keto pizza where I made the crust with ground Italian sausage. Heck I made meatloaf and mashed potatoes on keto using coconut flour as a binder and turnips or rutabaga in place of potato's. I made mashed sweet potatoes out of carrots. Abd I made sugar free cranberry sauce. I figured out ways to have all my favorite foods mostly while on keto and it wasn't hard at all. Heat and eat lasagna was replaced with eggplant lasagna and meat sauce for example. Fried rice id do a stir fry instead. Low mein is use kelp or shiritake noodles. Nothing is really impossible to have with keto if you think outside the box, even with further restrictions because of specific health issues.

@@kathydoan2845 it's not have to, those are recipes I liked. Keto can be as simple as hamburgers or hot dogs without the bun with lettuce, tomatoes, onion, pickles, cheese, alvacado, mayo or mustard. Basically all the fixings no bun no ketchup. You can make chili on keto to have chili dogs no bun and you can make fries with turnip or rutabaga by baking in the oven after costing in salt and olive oil. You can buy at the store things like salted and dry roasted sunflower or pumpkin seeds or pork rinds or Parmesan crisps or seite chips to have chips along side it. You can steam or sauteed broccoli and melt shredded cheese on top, do bacon fried cabbage, etc. keto can be as simple or basic as you want. Some start with a basic chicken breast and steamed broccoli as their main thing or salmon. But things like air fryer stir fry or omelettes and frittatas and all sorts of yummy things exist. Abd mc Donald's or other fast food if not fried can be done with keto as well if you don't do the bun or fries and stick with a burger with only meat, veg, maybe a bit of sauce maybe the cheese. I have to be more strict behind my health issues and modify for my specific needs. But it's not really hard. Meatloaf I made the same but I cut the entire packet of saltines and subbed that with coconut flour but you could use almond flour or really a whole host of substitutes. Carrot sticks with a sugar free yogurt dip and deli meats with cheese are very keto friendly as are chicken, tuna, or egg salad. You can use egg life wraps or lettuce wraps or a store bought low carb bread for wraps or sandwiches. I rolled around with a lot of wild things especially when I went carnivore for a month behind my health issues. Carnivore is the most strict variation of a keto diet with the lion diet being the most strict form. The lion diet is meat (beef, lamb, deer, or any rumenant animal), water, salt thats it. That's for people who really have a lot of health issues that flare up with any plant consumption because of the plant defense chemicals they as a individual do not tolerate. That's really strict and so not my thing. Carnivore was a bit of a stretch for me but I had to try something. Keto can be as simple or crazy or complex as you are comfortable with. You can stick to chicken and fish/shellfish as your protein and things like nuts, eggs, alvacado as your fats, and leafy greens and cruciferous veggies and some dairy or berries for your carbs. At the start basic often works best anyway and later tooling around and experimenting allows for diversity to avoid food burnout and makes it fun.

@@kathydoan2845- this is unrepresentative of what happens. Yes, sometimes people don’t feel great as they transition from eating high carb to low carb, but once that is over, most feel great. Their previous health issues disappear or, at least, improve greatly. I eat a fatty ribeye with full fat sour cream, cheese, and guacamole. I may have some green beans or a salad with walnuts, feta cheese, bacon bits, and Trader Joe’s green goddess dressing. It’s a delicious way to eat.

the longest i 've been on keto / ketosis seems around 2 months then.. some meds that i take have side effect of weight gain, and cravings.. so it was tough to follow
