Feliz Navidad, hermano! I made this dish last night as a quick Christmas Eve dinner before church. I didn’t have asparagus so I substituted some chopped spinach. Came out unbelievable. Two of my friends came over so I had to cook something. This was the right thing. Everybody loved it.

This Desperately cries for some chili and cumin powder!! And use fire roasted diced tomatoes not just plain old diced tomatoes. I also add half of a se!i-cooked red bell pepper diced. Although it's not traditional, I add some cooked italian, or on occasion chorizo, sausage. It makes for a heartier meal.

For god sakes. This is Shakshuka. It is not “Spanish eggs with tomato” 🤦‍♀️ any place in Israel or some North African Arab countries that serves breakfast will have this traditional dish.
