I made this last night for mine and my Husband’s tea and it was quite quick to make, although I used rice rather than cous cous. It was absolutely gorgeous and had enough leftovers to feed us for our tea tonight too! I’m not surprised it was good, I don’t think there’s ever been a Happy Pear recipe that I haven’t enjoyed.

Such a coincidence that I came across this today as I was just thinking of making a Curry out of left over veg etc in my fridge. I love this! though dietitians recommend getting healthy oils for your healthy cholesterol levels and nutrient absorption at lest in small amounts. its also important for healthy tasty salad dressings and sauces to help satiation

It’s logical to me that fats from whole foods would be the ideal way to get it. So eating olives, nuts, seeds etc. Once you separate oil from their food it’s changing the chemical composition and is no longer food.

That's completely true, oil doesn't have to be in every meal though. We find in our own lives when we're going during the day or if we eat out somewhere we're going to have oil in our food, so sometimes it's good to leave it out when you're in control of how your food is made a couple of meals a week.

I don't know, guys, the 5 minute thing is a nice little selling point for it, but those flavors definitely don't have time to develop in that time, especially when you're putting a can of tomatoes and coconut milk in there. I don't believe that it tastes actually good at the point where you're taking it out, it needs at least like 10-15 minutes to simmer and let the flavors render and combine nicely.

It’s pretty tasty but it definitely does taste better the longer it sits. Sometimes we just too to get food into the kids as quick as possible though. We’re like performing clowns in the kitchen speed cooking 😂

@@thehappypear Made a 'tweaked' version of this tonight... slower cooked. Started with diced red onion in some avocado oil and then added chopped button mushrooms. Apart from that a 'needed to be used' carton of passata instead of the canned chopped tomatoes. This may have been too much liquid as I had to reduce it for 30 mins. I used the garlic, chilli and ginger in the recipe plus 2 tablespoons of medium curry paste and half a teaspoon of turmeric and a teaspoon of cumin and coriander .... in the end it felt it needed more spice so I added a little Sriracha and finished with some garam masala and chopped coriander. Overall result was very nice. Warming, filling, delicious and not heavy. Ohh I served with brown basmati rice. Definitely worth adding to your menu list.

There are good fats in this dish. Good fats are great but we’d rather people who are restricting their calorie intake get the good fats from a whole food source that isn’t as processed as oil and will have a bit of fibre too. A portion of nuts, avocado, tahini and coconut milk are great.

Great recipe but please research healthy fats, low fat products are not healthier for our heart health and a full fat coconut milk is preferable. Please consider the research involving low fat products which are generally not better for us and may well have done great harm to public health over the last 50 years.

Low fat coconut milk just means more liquid to cream than usual. It’s more of a ratio thing than a substitute. When we’re writing these recipes we’re also thinking in mind of people trying to make every calorie could and for the sake of some oils and an extra bit of coconut cream you can make a full extra plate of veggies. For this meal in particular

Get a jar of curry paste and follow the instructions on the back Saves a lot of faffing about. Alternatively, a tin of baked beans, shove heap teaspoon full of curry powder in it and warm it up in the microwave.
