I made this pie today. It's great! Coconut cream pie is my favorite, but I don't like to have all the pie crust work and calories. This is such an easy recipe. The hardest part was waiting for it to cool. Thanks for all your cooking and lifting up of Jesus videos. May God continue to bless you.

I just saw your channel in the suggested videos. I’ve never heard of an Impossible Pie but because it looked like a Chess Pie and because you have ‘hillbilly’ (I’m from Louisiana) in the title I thought I would watch your video. When I saw your Jesus is Lord sign I was so thrilled at your boldness to acknowledge Him! It is so encouraging for Christians to see other Christians be open about their faith in Jesus as their Savior. You are a blessing! You inspire me. Reading the comments shows that many many people are touched by you. You are a great example of a Godly woman.

I saw this video last night and made the pie this morning. It looked just like the video! We can't get Bisquik as we're in England. We're both diabetic and we love our British custard tarts. My husband flipped for this pie! He said he'd have this ANYTIME! We also have a loaf of your bread in the oven at this time, too. God bless you!

Hey Phyllis! I know your post was some time ago… but thought that I would share how to make this recipe more diabetic friendly. I am type 2 diabetic but insulin resistant. I am restricted in carbs as well as sugar. I use almond flour ( 1 cup = 4 carbs) and substitute stevia for the sugar. ( use pkg directions for amount to use). I also use almond milk instead of any type of regular milk. Low carb eating allows more butter/ fat. It is the carbs / sugar in milk that effects diabetics. This turns out to be about 7 carbs for the whole pie compared to almost 200 as the recipe is written. Oh… and no coconut… I am allergic. 👍

Look up Missouri Mix and make your own. It's a great mix and comes with a bunch of recipes that you can make with it too! I used to make up a huge batch when my kids were small and we'd make cookies, muffins, pancakes and all sorts of things out of it! Nice to have it on hand when people show up so you can make biscuits and stretch a meal

I was sitting here in Pennsylvania yesterday, and saw this video come up. My grandmaw (full blooded Pa. Dutch, by the way) used to make two of these for every holiday. I had the ingredients, so i went on and made one. Well, last night, my sons band had practice. Those boys thought this was the best thing they had ever tasted 😊 there was a few slices left, but when i went to get one just now, all i found was an empty pie plate! I love watching you cook. Ill be making your broccoli cheddar soup tomorrow. Thanks for all the wonderful comfort food recipes. I will keep watching!

My Mom made this back in the 70’s. I hate coconut, so she’d bake me one without it. This and her Mountain Cobbler were two of my favorites. She could come home from work and whip these up for dessert after supper because my Dad had a huge sweet tooth. The Mountain Cobbler makes its own crust too. @@skyydancer67if you have a summer squash in your garden, the tender yellow ones or zucchini, thin sliced of these work as well. You can sprinkle seasoned breadcrumbs or your fav savory herbs on top, for extra flavor. I'm not fond of really acidic tomatoes either. I tend to grow less acidic varieties. And the sweet, wee, Sungolds I can eat straight from the stem!

Do you have an exact recipe for your tomato pie version? Would love to try that one too. I make tomato pie every summer but would like to make a crustless one. When I first saw this recipe it was on either a Gold Medal or King Arthur flour bag -- as near as I can remember the late 50's or early 60's -- they had several variations to it.(different flavors) they also came out with a pizza recipe that you poured a batter (a little thicker than cake batter) in a pan and carefully spread pizza sauce on it and added the veggies and cheeses you wanted and baked it - it was really good. In those days almost every bag of flour came with a long strip of recipes inside.

Thanks for reminding me of the pour pizza. I missed those kits till I forgot about them. These days it costs so much to be able to buy proper groceries. I stretch everything as far as possible, or else I'd starve. This may sound crazy, but last year I had car trouble and hadn't been able to get to the grocery, all had was a couple cups of flour, 2 eggs, and of course sugar, flavorings and such. I thought what can I do. So I baked a cake. Problem solved, untill I could get it to the store. I have tried making the cornbread pizza, or whatever it's called. Almost half an inch of liquid corn bread mixture, put all ingredients on top of the cornbread mixture, (if using ground beef, turkey, chicken, etc, fry that up first before adding to the mixture) the ingredients consist of whatever you like or want. Bake all together like you would cornbread. I forget what it's called and haven't made it in twenty years, because I can't eat anything that's gritty, especially cornmeal, seeds, nuts etc.. Anyway that's a full meal unless you want to have a salad with it.

I made these 40 years ago with Bisquick & now would use the low sugar variety & it is really quick & easy. Thanks for your version. (BTW, I love coconut, myself!)

Made the impossible pie today. Added a sprinkle of nutmeg on top & eliminated coconut extract, put extra vanilla extract & did use coconut on ingredients. Went over well with our company. Thanks for the recipe.

@@jackieb3056 From Lil Giant Did you eliminate the vanilla when you used the lemon juice? Did you put in two serving spoonfuls? Or two teaspoons? Two Tablespoons of lemon juice?

My man likes pie every Sunday, since he was in a nursing home for 4 years and every Sunday was pie day. I don't have anymore crusts handy, so I'm making this tomorrow. Neither one of us likes coconut, so I'll make it plain. I can't wait to try it. Thank you and God bless you and your family.

My mother worked for a company that out a recipe book from all the employees every year. The first one that she gave me I used to make this dessert all the time .I don't know why I ever stopped I could not remember the proper measurements and I used the book to death that she gave me with that recipe. She also had a duplicate. She passed away in February 2021. I did not think I'd ever see this recipe again. Thank you so much.
