You are correct I'm 50 years old and I remember being 5 years old on my grandma's farm in Georgia. She had hams hung in her smoke shed for as long as I can remember the last time I visited her was when I was 25 and that was when she was not doing well and she asked me to go check on her hams in the smoke shed. Yes this is my life story and it's true. We've lost so much information I remember my Grandma bringing a ham in from the smoke shed and she just start slicing off of it I ate it for 20 years never bothered me. It was just the old wooden shack that she hung her hams from because yes we lived on a Hog farm and on the bottom shelves she had all her Jarred jellies and things like that. As a child I was in excellent health never had any problems, ate well. So y'all are doing excellent don't let people tell you you are not ❣️ Thank you for your video today! 🙏

@@annl5227 True that. I'm craving hot pepper jelly and will can some soon. My garden is a no go in the summer. Too hot and. NO rain even with us in CA in monsoon season. I'll have to get my green peppers from Sam's.

Loved this! Buggys apron is perfect. My grandkids each had an apron and wore them whenever we cooked together...which was often. Lots of fun videos to look back on. Keep that sweet girl in the kitchen with you. It is such a special time. 💖

I watch you guys all the time,,my wife just popped in and wanted to see the hams. She glanced at the screen and said " hey, they have the same light fixture as us". I never noticed,lol

I think it’s great that y’all have learned to preserve meats like our forefathers did. Peaches look delicious. My tomatoes have done the same as yours. I fought blossom rot and took your advice to add calcium and magnesium, that helped a lot. I had to water every day bc lack of rain, then lots of rain and my tomatoes are split. On the bight side my peppers and cucumbers look great! I had volunteer plants come up that I thought were yellow squash since that’s what I planted last year. Much to my surprise and a lot of my friends I gave the volunteer starts to it was pumpkins. Gardens are just full of surprises!

I've just started to preserve meats in salami's and bresoala. It's really worth learning because it tastes amazing. Homemade and cured salami is just the best. I'm about to taste my bresoala for the first time and it should be amazing too!!

Loving the temp on that compost pile! I’m still adding to mine over the poison ivy, but I have pushed it back and gained some of my property back. That’s partially the point of all that landscape cloth under the melons, so you don’t have to mow, in addition to helping with bugs, etc. But watermelon don’t mind grass, it’s ok to leave mowing until they’re done. No stress mess lol. Little Sister was just totes adorbs with her hair done and her apron on! I love that she wakes up all smiles 😊 I bought some nice cucumbers to pickle with onions and garlic… mmm. So good! Enjoy the rain!

Such a busy kitchen. Meg, where do you find all your energy...I am worn out just watching. Everything looks so good and your lacing on the meat rolls is lovely. I love this channel. I'm 55 and Meg reminds me alot of my late mother and my wife of 32 year, true Moms. Taking care of their family in every way. Your daughter and sons have two great parents . They get to grow up with two good roll models that are showing them what a good mother/wife and mom are and a man/ husband and father should be. Great channel keep it up.

My husband and I watch y'all everyday. Y'all have made me more inspired to do gardening again and I'm excited to get back to it! My husband has been sick and Ben- watching, haha. The past few days he has felt better and better. And y'all got him so motivated to get the brake lines done on our truck, that has been broke down now for 3 weeks. He's a jack of all trades master of none. He's wanting to do homesteading like his mom and sister. He was a farmer on the wrong side and now ready to be on the homesteading side. Last summer he delivered a calf for his mom's homestead. They also watch y'all. I love watching buggy watch and help Meg in the kitchen. She makes me laugh when she starts grabbing something to eat like you guys aren't watching! She just tears my husbands emotions up because he loves his kids just like y'all. Meg any suggestions on what to make to help with anxiety? I'd appreciate it if you do, thanks! We love y'all and your family, God bless from Indiana Tina and Robert

Glad to see that I am not the only one to buy produce in bulk and then struggle to get it processed. Yep, got 50 pounds of peaches coming in next Thursday. My whole weekend will be forfeit... But what a tasty forfeit - jam, pie filling, fruit leather, and almost forgot - pickled peaches. 😍😍

In all the videos , on you tube I watch ,your family is the busiest and produce more food then anyone. I so enjoy watching you all take care of each other. You remind me of the summers when I was home. We didn't live on a farm but my Mom was a farm girl and she knew all about canning and preserving food . We had a garden every year and Mom canned everything she could. We would go to places that sold produce that we didn't grow and buy at it by the bushel and can it. I can't😀 live on a farm and do all the things you do so I live through you and your family. Thank you

As a Georgia native, you two getting your peaches from South Carolina is sacrilege 😂.Your level of food prep and self sufficiency is truly inspiring. I hope to be on your level one day. Just an idea, roots and refuge mentioned experimenting with breeding one of their old spots with a Mangalitza. Might be a cool experiment for Mo and your female Mangalitza! Maybe you'll have more breeding success and a quicker turn around time? Just an idea :)

Missed this video, probably in the chaos that is no rain for us. Yet all the pressure headaches and preserving, harvesting hustle. Rain happens, on radar, above and below us, but just easing right around us. Hairsticks and braid in this one too. :) Now that's the way to live. Have to see if I can jab my dust collecting beautiful hairsticks in and yet still get my hat to stay on. Never occurred to me to try until I saw Meg do it! The straw on ours is too tight a weave for hatpins. I think. That was the idea at least for head protection. We do cut out our tomato splits, but also if possible run outside to bring in anything heavily blushed, right before the skies open up. With good visible warning this is less frantic. They still ripen inside on the counter, without the splits. Also grab any eggplants, or other fruit as well. Wow, that wrapping job looks so cool! I've never made cured meat. How awesome that you all, along with others, are learning this beautiful useful skill, and hosting classes to spread the knowledge. Maybe I can find a follow along online class or something, because that looks so accessible in a nice normal kitchen. Fell out laughing over both the cutest peach snacker, but also again about the bandaid explanation! I've always wondered about the blanching and skins. Guess now I know why it's important. Spaghetti Squash are C. pepo, and the sites I saw listed Cherokee Tan Pumpkin as C. moschata. So can't cross. However, zucchini, and summer squashes are usually C.pepo! I have my rotation list for cucurbits, and still need to consult it every year to make sure it's only one variety per sub-species that I'm planting. For sure it isn't always obvious. Funny that sketchy squash taste potato-ish. Which should still be good enough with the sauce, better treated as suggested though. You may be selling that to a seed company one day if stabilized.

RE: AC My dad was born in 1928 and the very first places that had "real AC" were movie theaters! Sometime in the 1920s, theaters in large cities started getting it. By the time Gone With the Wind came out, the theater in Parkersburg, WV had AC. It was either "on" or "off" so it would be FREEZING in the theater LOL. BUT, it was literally the only refuge people had from summer heat. Nobody had AC in their homes then; most people were keeping their food cold with the old style ice boxes with real giant blocks of ice in them. They used a "summer porch" for the kids to sleep on at his childhood home that my great-grandfather built in the 1880s. Anyway, this is probably more than you wanted to know, but AC has been around "almost" 100 years!

My grandparents dried and hung many different meats in their basement. At least one beef, 2-3 hogs and as many deer as they could get. Much of it was smoked in a log smoke house. It all smelled wonderful. This was in the 1950s.

Dare to be different! I have admired those hams hanging in your kitchen. My first coppa failed but I didn't give up. The key to my success is smoking cured coppa to internal temp 150F. Works for bacon too. Too humid to hang openly in New Orleans. Keep great Vlogs coming. Very relevant, even the mistakes. LOL

Hard to tell on my phone but the sketchy squash looks like it would be good mashed into patties and fried in a little lard or butter with salt. Maybe a little green onion or chives if you have it 🤤

Australia has a very large Italian population, they're famous for their gardens, tomato sauce and salamis, all home made. Our deli's have meat hanging from the ceilings. We have constant flies here, every window and door has flyscreens.

Love the name sketchy squash, lol. I grew banana cantaloupes beside moonlight pumpkins once, and saved seeds from each. Next year, when I'd planted those seeds, idk what happened. Both were inedible! Now I keep my plants that I save seed from on opposite sides of the garden. 🥰Hollar Homestead

All I can say is you inspire me with sticking to the plan for dinner. Perhaps the ‘sketchy squash’ wasn’t what you were expecting but I appreciate that it wasn’t going to be wasted! I also appreciate that you left that in the video! The peaches looked so beautiful! I find peaches to be one of the prettiest fruits on the shelf once in a jar! 🍑

My father-in - law was raised on a farm in Pennsylvania in the early 1900s . They cured the hams in a upstairs closet (no refrigeration) it would be covered in mold that would have to be cleaned off be for eating. Pork chops would be layered in a crock with pork rendering poured over the top.

As amazing as y'all are Buggy is soaking all this up like most kids learn language. Homesteading with her right at your side as young as she is it's going to be so deeply ingrained she is going to be incredible. Did you both grow up this way? That would explain so much. Did your boys start out underfoot as well?

I saved yellow squash from last year that apparently crossbred with pumpkins. We've got some interesting things growing in the garden! The chickens will be happy at the very least!

I never comment on You Tube videos, but I saw your video. Please do not throw out your split tomatoes. You can freeze them until you have enough to boil. Boil them and blend them. Then add your seasonings and you will have a delicious BBQ sauce. I live in Florida and the plants suck up the water to survive but the tomato is still good to use. I love your videos. They are inspiring. Thank you.

We are in a similar area with all the rain on and off so I pick my tomatoes when orange or nearly red and like you did, just before a rain when they are perfect. They ripen in the kitchen and are great for fresh eating or canning. The chickens get enough of them as it is. Love the coppas hanging by the pantry! Wonderful job! Impressed!

Just so you know my age, I remember my parents salting hams and hanging them in a smoke house , in Eastern NC there was no ac in that barn , and we always had ham throughout the winter from our pigs . So I’m sorry you were told flys would attack them in the kitchen… makes me laugh! Think January is the perfect time of the year to harvest your pigs .. we always chose the colder months as well .

Talking about the "double cooked" peaches, I agree with you. Two cookings makes them more mushy. I changed a few years ago to raw pack peaches. I wash them, use a veggie peeler to peel off the skin then slice and raw pack into jars and process as normal. I add 1 teaspoon dehydrated cane juice (what we use as sugar) to each quart jar then fill with filtered water. It makes a super light syrup and the taste is wonderful. I use a steam canner instead of a water bath canner because it uses so much less water, time and electricity.

If you plant your squashes close to a different variety bees will cross pollinate. Sometimes they come out really good!

South Carolina peaches the BEST! I would know, I live in Johnston, SC, and it's called the Peach Capitol of the World. Video was great and Ms Buggy's hair in a ponytail was precious.

Acre homestead made a jelly from pits and peels of peaches. She froze them in the summer and made the jelly during the winter lull.
