I sense an elderly lady in that doorway Billy, she is quite lovely and kind, but shes confused about what's happening there. Be gentle and kind as i know you are, and just speak with her and let her know that you are restoring the old convent and renovating it into a hotel for the future and she is welcome to stay if she likes. Let her know that its now the year 2023 in your time and that things have changed over the years and you would be making this beautiful building into something new and more suited to this era and more comfortable for guests when they come to visit especially if they've come to have weddings there. Im sure she would be delighted if she knew more, although she probably does, it’s good to talk to them, that way you will both feel a little more at ease. Let the spirits know that there's going to be some machinery noise while you're renovating but it won't be all the time as you slowly move from floor to floor. Id love to be there so i could interact with them. Enjoy your stay there Alex. 😊 Crack on!

Regarding that huge stone fireplace in the kitchen, it would look so much better if the white mortar were stained to match the old mortar. I remember and appreciate all the work that went into repairing the stone, but if the mew mortar matched the old mortar it would look less jarring, and more like the original fireplace. Keep up the good work!!

Loved this! My two cents as an Interior Designer for hospitality industry- please study some hotels like the one you’re building to make sure it’s not only beautiful but functional for the people who work there. For instance- a small management office, employee break room etc will need to be relatively close to reception area. You don’t necessarily need to kit those out, just make sure to have spaces built that can be used by whomever buys/runs the facility.

When I was a good bit younger I visited the father of my father's best friend; he was a master plasterer, and his home's walls were gorgeous--and not so much as a hairline crack in them. Some years later an old bank building where I was then living was refurbished, and the carved plaster ceiling was restored--they had to bring in plasterers from Italy; there were no Americans left who knew how to do the work. Quite a few years later our daughter moved into an apartment building built in the 1940's that had a bit of cement blended into the hand applied (but plain) plaster interior walls; the cement made the plaster incredibly strong. And that is most of what I know about plaster. Except that one house where I lived, built probably within a few years of 1900 (to judge from the siding pattern), had plaster interior walls that contained horse hair to strengthen them.

I've said this before, but they should decide soon-ish if they want an on-site commercial laundry for the hotel. Hotels go through lots of linens and towels. Adding this after everything else has already been built could be a challenge.

Billy, having a toilet door open straight onto the reception area doesn't sound appealing. Perhaps you could give the end of dividing wall a right angle bend so that the toilet door is at 90 degrees to it. You would loose a bit of space in the bathroom but it would be much more discrete.

Sorry, Billy, but one thing is missing in the Kitchen build. It's the entire storge for standby foods. Seems that you need a Freezer, Cold storage for vegitables, and container storage shelving. Seems that there is adiquate space beside the stairs in the basement area that would be ideal for quick access to the staff. Currently, your planning has seems to only afford a daily delivery of supplies, instead of planning on the necessary daily startup and expenditures used during the daily operations. Alternatively, cut a new access in the floor and install a new spiral stair and then you will be able to frame that current trap and seal it up for safety of a careless person entering from the outside and inadvertenly falling into that opening.

That large room should be a dining room and main event room. The kitchen can go in the smaller room. Also keep the fireplace open for a fire - yes, a remote-controlled gas fire with a suppression system all up to code - but that is what will sell this space for events and for yourselves on cold winter days. That nice vintage stove and oven can go somewhere else in the complex, used for heating a large room. You need a main room, and this one makes perfect sense.

You should carry some powder one time and squirt it near the door to see which way the air is moving
