I have made a similar version of this stew, to make a more traditional stew type broth (gravy) when it's done cooking I take a cup or so of the stew, blend it and return to pan and stir. Yum!!

I'm making this tonight. I'm going to add green beans and instead of potatoes I'll serve it over mashed potatoes. Any excuse for mashed works for me! I also learned from another KZbinr that sautéing the tomato paste with the onions & garlic really ups the umami effects.

I made a similar stew from a slow cooker cookbook and made seitan for the first time. I know we would love it without seitan too. I just wish we had more leftover for another meal. We gave one container to my father-in-law, age 87, and I ate the rest for for lunch. Next time I'll follow your instructions. I like the addition of tomato paste for richness. Yum!

I made this tonight for my hubby and he loved it! I am trying to incorporate as many WFPB dinners for him as possible, but mostly he dislike them. This vegetable stew was a flavor rich success! 🤩. @@christinepeters7110 I don’t like the aluminum foil to touch the food, so what I do is I line my foil with parchment paper and use that to cover the food. The food will come in contact with the parchment paper and not the foil. But the foil helps hold the parchment paper in place.

Note: I just made this wonderful recipe and would suggest to watch the video carefully as the print instructions are missing some steps such as when to add the garlic, tomato paste, and broth. Also braggs / tamari and black pepper are not listed as ingredients on the print instructions.

Yes, you can use white wine instead. I haven’t tried cooking it on the stovetop but I think it would work. You might just watch it carefully so that the bottom doesn’t burn.

Assaissonnement Bragg: I guess I didnt look closely enough, but the serving size is small and at first glance it looks like a lower sodium product. BUT! , converted to the 1Tbs/15ml that everyone else uses: Kikkoman low sodium - 575mg Kikkoman regular - 920mg Bragg - 960mg

I need to ask a question I made the peanut butter chocolate brownies followed the recipe and it almost broke my food processor. You have no liquid listed ? I had to add some it was not going to mix. I didn’t know how to reach you . Please let me know if the recipe in the book is wrong?

The recipe is correct and you are right, it is very dry which can be hard on your food processor. You can add a bit of water or plant milk to get things moving without it affecting the overall recipe 👍

@@ThuLe-eh1xe It tastes salty because it is high in sodium. It's a trick of food processing. In their case they don't add salt, they remove so much of the stuff that *isn't salt* so it ends up being high in sodium.

@@ThuLe-eh1xe As far as I can tell the sodium comes from baking soda that they need to add to neutralize the hydrochloric acid they need to use to break apart the soy into amino acids. They apparently don’t need to declare the hydrochloric acid or the baking soda as Ingredients because they are are food processing chemicals.Personally I wouldn’t use either, I just get used to not having the sodium. One you’ve been off of added sodium for a couple weeks you don’t miss it.
