Can you just clarify the amount of boiled potato you used for the topping when you add them with the cheese and jalapeño? I must be missing it somewhere in the directions/recipe. Thanks!

@@jackiewalsh6678 no I actually didn’t clarify it cause i don’t have a quantity for that. Just don’t go too heavy with the filling and you’ll be good. If you put too much it’ll make the dough heavy and will not rise as much as it can.

I live in Florida and it’s to hot to make pizza outside with my Roccbox so I’ve been looking at all your videos. All I can say is they are the greatest I’ve seen on KZbin!! I’ve been making Detroit Pizza for about 2 years and never thought to do a ten minute pre-bake to keep the rise up! I’m going to do all your video’s and you will be hearing more from me. I will have to try this method! I usually use pickled jalapeno (seeds in) slices, the pickling liquid adds a nice sharp sour note to the profile (pat them dry first though otherwise things get soggy) and a drizzle of molasses or maple syrup just to alleviate the very savoury flavours.

Great content as always. As a lover of pizza and particularly homemade, I enjoy all of your videos. Focaccia looks incredible. Like me, I’m sure you love your Detroit steel pans. When I bought my first 2, I thought Wow these are not cheap but now a few years later, they have paid for themselves 100x’s over.

Bloody amazing!! Worked excellent on the first try. Did have to modify the water percentage a bit though as we have quite weak / low protein here in The Netherlands. Taste and texture were perfect!!
