it feels and looks like there is too much prep in the dishes before service, it looks like its just assembled vs cooked if that makes sense. everything is so focused on restrained and clean that it becomes similar to how in music engineers will compress the sounds by cutting off the highs and lows in frequencies. this is why most music today sounds like a wall of sound and the older music has so much depth warmth and tone. i feel like fine dining does the same quite a bit. the intensity gets compressed in favor of molded “refinement” which is usually less punchy less aggressive leading to a dulled out flavor or texture

Great observation! It's a tough balance to strike. It's rare to find a restaurant that nails that level of refinement, especially throughout every course in a meal, but there are some out there! Sezanne is ranked the #1 restaurant in Asia by the Worlds 50 Best Restaurants as mentioned in the video. Just because it’s ranked the best doesn’t mean that it actually is, hence the criticisms of the dishes. Hope that helps your simple little brain understand things better 😉
