THIS IS PROBABLY THE BEST VEGAN SANDWICH IN THE WORLD!

Attention eggplant haters: Yes, that's absolutely true! this is probably the best vegan sandwich in the world! It is meat-free and yet its made with one of the meatiest of the vegetables: The good-old eggplant! And its topped with an amazing Italian tomato sauce that's so easy to make and its to die for! The complexity of the oven roasted tomato sauce matches and pais perfectly with the crispy and tender texture of the eggplants, along with the vegan mozzarella and the arugula's light bitterness, its just a perfect combo!
INGREDIENTS:
FOR THE ROASTED TOMATO SAUCE:
1 1/2 pounds of San Marzano tomatoes
salt to taste
black pepper to taste
oregano to taste
1-2 cloves of garlic
2 teaspoons of brown sugar
FOR THE SANDWICH:
1 large eggplant
breadcrumbs
1/3 cup of all-purpose flour diluted in water
1/4 teaspoon of onion powder
1/4 teaspoon of garlic powder
a pinch of salt
1/4 teaspoon of smoked paprika
a pinch of black pepper
Slices of sourdough bread (or any other bread of your choice)
2 tablespoons of vegan butter
fresh baby arugula
dijon mustard
vegan white mozzarella cheese (recipe below)
balsamic vinegar reduction
METHOD:
MAKE THE OVEN ROASTED TOMATO SAUCE:
Preheat the oven at 200C (400F)
Slice the tomatoes in half, place them facing down on a large baking sheet, add all the ingredients for the tomato sauce, mix to combine, the tomatoes are supposed to be uniformly seasoned and oiled.
Put the baking sheet with the tomatoes in the oven for 35-40 minutes.
Remove the tomatoes from the oven and blend them along with a splash of water. Adjust the salt, pepper, and sugar, if needed.
MAKE THE EGGPLANT PARMIGIANA:
Peel the eggplant and cut them lengthwise into 1/3 inches thick.
sprinkle salt on both sides of the eggplant, place them onto a wire rack with a paper towel underneath, let it sit for about 30 minutes.
Once the eggplants have released the water, pat them dry and reserve.
Add the breadcrumbs on a plate and the flour on another plate along with the paprika, salt, garlic powder, onion powder, black pepper, and salt, add water to the flour as well and mix until well combined.
Place one slice of the eggplant in the flow water mixture, cover it well on both sides, then place them in the breadcrumbs.
Fry them on medium heat for about 4 minutes on each side. Remove them from the oil and place them on a paper towel or a cooling rack.
ASSEMBLE THE SANDWICH:
Add the vegan butter to a skillet, on medium heat, when it melts, place the slices of bread. Let it toast a bit, flip the bread, and let it toast a bit more on the other side.
Remove the bread from the skillet, put it on a plate, spread the mustard, add the arugula, the balsamic vinegar reduction, the fried eggplant, the tomato sauce, and the vegan white mozzarella. Close the sandwich and enjoy!

@@massabielle2821 they aren't allowed to clean their litter boxes. But they are allowed to have cats as a pet. Kids are No different. Actually they may be worse. Digging in their noses, rear ends, playing with their feet, playing in the dirt. The surfaces can be cleaned unless the person doing the cleaning is a sloppy cleaner.

I love eggplant coated and fried..... My favorite way to have it is fried crispy and floating on top of tomato soup that has been seasoned with hot chili sauce.... So good in the winter time....

I know where those cat paws have been. Now your counter is just as dirty. They go from the litter box to the counter. I'll never understand why people tell themselves there's no fecal matter or urine. Paws are highly textured, there are spaces in between the paw parts and under the nails and then there's fur. There's lots and lots of fecal matter and urine. And now it's on the counter.

Any time I see a cat walking around on the kitchen counters, i know the food is not clean and has cat hair. You may be a cat lover but it is unacceptable. I saw a cat jump up on a friend's counter and lick the butter after cleaning itself. Cats should NOT be allowed in the kitchen.

That is absolutely not true, there is no cat hair in my food, there's no way you can state that since you don't live here. And my kitties do live here, therefore they are allowed to move around cause it's their house, and even if I wanted to, it is impossible to restrain a cat :)

@@ChefJana Oh, those are the best kind! She is beautiful! And that dance you did with her made me smile, it was great! Rescue cats and dogs are the best! All of my dogs except one have been rescue dogs. The one was from a litter of chihuahuas that may parents dog had. Her name was Precious, and she lived for 15 years! I found my Taylor, a Jack Russell Terrier, behind the hospital I had worked for at the time, it was in October and getting cold, and he was skin and bones! He ate my entire lunch, and went to sleep on my coat. I took him home, and we tried to find his owners, because he had his tail docked so we thought someone must be missing him. Well, no one claimed him, so we kept him and he was with us for 17 years. He was the best dog! My husband and I both loved him to bits. As a matter of fact, just yesterday marked 5 years since he passed. But, although we were beside ourselves when he died, we still feel blessed beyond measure that he got to be our dog and that we had him for an impressive 17 years! And healthy for all that time until the last few months. (Psst! I love love love your blouse in this video!)

I love cats but my son who lives with me does not.... That's the reason I don't have a cat..... if he saw a cat get on the table or counter, he would go ballistic.... Cats are MUCH 'cleaner' than dogs. Your son does not 'like' cats for a very simple reason. He has to EARN a cat's love and trust. Dogs will even LOVE a person who hurts them at times. Cats are much more discriminating than dogs. Dogs are TRULY not right in their heads regarding loyalty, in MHO. Oh, and I DO love dogs as much as cats. But when my neighbor across the street is 'walking' his little Pomeranian in minus 5 degree, wind-blown snow weather, my little buddy and I just LAUGH as he implores Ziggy to PLEASE hurry ... and just GO!!! Yup, I've never had to walk a cat in my near-70 years.
