Here's my take on it: I put some lemon rind and lemon flavoring in the cake, bake as per recipe. Slice cake into 2 layers, add lemon curd and whipped cream to middle and top for a lemon shortcake!

Whip up some of those egg whites into stiff peaks with a pinch of cream of tartar and fold some of that lemon curd into it. Bake a few minutes to kill anything. Like lemon pie.

I make pavlova with the egg whites and then fill the pavlova with the lemon curd, blueberries and top with whipped cream. In fact I make single sized pavlovas so they can be eaten over the week. I store mine in the oven to keep them crisp.

This is my favorite summer dessert. I make individual meringue crusts and after filling them with curd, yoghurt or whipping cream, top them with various fresh fruit. Absolutely delicious and impressive looking.

I make my lemon curd backwards! I didn't even realize until I saw this video. I put the eggs, juice, sweetener in a pan and beat it until smooth, put on med-low heat and stir until warm enough to melt the butter, THEN put the butter in. Add zest very last. I am always challenged with eggs cooking when I try to temper them into something and this has never failed me. I really don't know where I learned to make it like this but someone must have taught me. ;-)

I know I've seen you do at least one other recipe that didn't cook all the way through in the oven. Have you considered that maybe your oven is not getting hot enough? You might try getting a little oven thermometer at Walmart or some place for a few bucks and putting it in your oven and seeing if you're actually getting to the temperature that you set it for. I had to do this and my oven was about 20° lower than it should have been when the buzzer said that the oven was ready to start cooking.

The oven method has no steam like the microwave does. Try setting your ramikin in a water bath( Bain marie) in your oven.

I find all the microwave mug cakes cook fine in the oven, I normally cook for about 20 minutes so your estimate of another 5 minutes is probably right. I think my oven temp is a little higher too.

when I bake cakes in the oven I use a cake tester stick to see if it is done. You can also use a wooden tooth pick. If it come out clean after you stab it it is done.

Give it a try, Egg white powder is expensive. For 2 tablespoons of egg white powder you can hard boil one large egg and remove the yolk once it is boiled, making sure you have all the yellow removed, and chop in a mini food processor until fine. It would be good to see if this works when a recipe calls for egg white powder as a lot of Carnivore recipes do.

You can also wash and blend 2 whole lemons with coconut milk and choc zero maple syrup. I do remove the seeds. Once it is frozen you can blend again and make a soft serve. Very good and refreshing.

I love lemon kurd and happen to have a bag of lemons in the fridge omg! I cant wait! I'm thinking of using it for a parfait, with cheesecake fluff, whipped cream, some toasted sweetened almond flour for a different texture and a couple of raspberries or layer it with a keto custard, and whipped cream. I can't remember who it was, and I haven't tried it yet, but they suggested mixing lemon curd with frosting to top a cake. This wasn't a keto cook, but I think it might work with keto lemon curd and a similarly low carb frosting. There are canned sugar free frostings that aren't so low carb. I think Betty Crocker or Pillsbury have them. Maybe the keto lemon curd mixed like 1/1 would cut the carbs down. Just thoughts.
