Sushi by scratch. High end chain sushi restaurant from LA. I went to the Seattle location. I was the only reservation on a Monday night (this was not planned!).

the big slice of pizza after 45 minutes of eating sushi is absolutely perfect lol

That's the Michelin star experience. You eat luxury to have a gallery of flavor for your tongue as the experience such like going to an art museum but for your tongue not your eyes. Then you go to somewhere cheap after to fill yourself up.

Hey kenji! Just to let you know. I SEE you using all the youtube formats. Youre really using this platform to the fullest and I love it! Its super engaging. The views probably are not as high as the main long form video uploads but I really enjoy all the varied content!

I never worry about views here. KZbin I just think of as a place for me to practice and try out various formats.

Kenji showing up to your restaurant on a slow Monday is like Bruce Lee stopping in a random Dojo to take some classes and do a review. Something tells me Bruce Lee would be equally as careful as Kenji when wielding their review power.

Looks awesome. The style is what I like from omakase, with the chef experimenting, inventing, showing off, and serving up flavor on an arc. The plain fish should be available a la carte. And the solo experience made me drool, though I also like sushi bars that are jammed and crazy. Oh man. Tomorrow I'm so getting sushi.

I went yesterday! What a coincidence you posted this right after, I clicked on the thumbnail because I recognized the street lol. I had a great time, it was a packed house with all 10? spots filled up. It was a bit more lively because there was multiple conversations happening at once which all came to silence when the chef began to explain the piece. I enjoyed the unique flavors and takes compared to traditional sushi without it being too "crazy". The only thing I didn't enjoy was the tea at the end, and it looks like you left or cut before that haha. Overall it was a great date with my gf and one of my top omakase experiences, which granted hasn't been very many.

Great review, sounds like something up my alley. As someone who grew up on south Asian cooking I’m always looking for blasts of flavour. While I can appreciate subtlety amazing ingredients, I’m always craving that punch.

Pardon the assumption, but provided I’m correct, as a fellow dad and lover of new/unique food experiences I appreciate you documenting your time dining solo. I live in a city with a great food scene (Nashville) but lack the ability to enjoy it as often with two young kids at home. I need to do more solo dining!

I've been to their LA location and agree with what you said. I much prefer their sister restaurant, Pasta | Bar. Same style (chef's counter seating) great food. (and the sourdough is amazing)

Kenji, how different do you think these experiences (especially the interactions with the chefs!) are given your background? Do you think they appreciate it more, too?
@JKenjiLopezMain4 ай бұрын
I don’t think they treat me any different then anyone else.

I don't always dig the Seattle stuff but this is just excellent. Like a guerilla / contemporary notes version of certain things Bourdain did. Thank you for not being afraid of breaking from the "formula"

I would have enjoyed the conversation as much, maybe more than the food. Would have probably been talking too much/asking too many questions😊

I find it a bit strange that such a high end place is serving escolar.
@blairhoughton79184 ай бұрын
I missed how they dressed it but it's got unique qualities that might be leveraged. But it being Seattle you'd think they'd leave that out in favor of six or eight varieties of salmon...
@masamunesword4 ай бұрын
@@blairhoughton7918 Yeah, at the amount they are serving it isn't likely to be a problem but fine dining and "the olestra of fish" is still a weird combo.

Considering the demographics of the people who go to places like that, Kenji was probably the most pleasant guest they've had in months, and that's a little sad

I find the talking up the incredients and technique part annoying and boring ... once is ok but it gets annoying. Just pretencious, let me eat my food. Maybe I really like something and will ask you about it ...
@habibieats4 ай бұрын
This is standard practice for a tasting menu, at least for all tasting menus I've experienced.
@GazpachoSoupDuJour4 ай бұрын
Why are you even watching a Kenji video then?
@philipp5944 ай бұрын
@@habibieats Yes, how did we get there? I cooked in fancy restaurant kitchens ... it's just another trick trying to get people to pay more for food. Like all the imported incredients ... so boring 10 restaurants fighting for the same product, just to justify their price. Why don't you justify the price by delivering food that tastes like the 300$+ you are trying to charge for the menu?!

@@GazpachoSoupDuJour Oh I don't mind Kenji's talk I mind the food introductions in pricy restaurants.

One of the omakase places in my town offers a “for regulars” dining experience where’s no talk, just enjoying the food.
