I have to say it, not only do I love your channels for the helpful and usually really tasty and solid recipes, but also just for your personality. Your sense of humor is great and it really helps make you more relatable, especially when doing dumb shit like poking the noodles into the boiling water cause that’s definitely the same dumb shit that I do. Just made this and was delicious. I grilled the chicken as I don’t have an air fryer. One tip, break up the noodles before adding water. It’s much easier than trying to cut them up later.

I made this for lunch this week and love it! That said, here are some tips/minor adjustments for anyone planning on making this: The carrots are amazing. I'd portion a little more of them: trust me, you'll thank me later. Second, I'd personally like a little more of the dressing. Next time I'll increase the portion to be about 1.5x the amount shown. Hope that helps someone else out.

♥️ Okay. So Ive been cooking all day today 😂 Made fresh bread & tomato sauce to go with my authentic Italian meatballs & spaghetti. (That was dinner) I also prepped the brine for my carrots early this morning so it sat in fridge a few hours before prepping. I made a double batch of everything (2 adults & 3 older teens who workout & EAT in my house) I just finished putting all the containers in the fridge & final clean up! 😊 Everything looks amazing!!! Can’t wait to try a bowl tomorrow Thank you so much for this fabulous recipe (I did try the chicken that I accidentally over cooked so it’s dry (& a bit salty) but it’s okay for my first meal prep ever!!!!!! I love to cook & in my country we cook fresh every day but it’s hard for my HS & college kid to take hot lunches from home. I’d love some more no reheat needed recipes like this one that are different from our traditional tortas & sandwiches!!!! Thank you so much!!! 🥰

If you want to cut down on carbs and cals use Shirataki noodles. I usually do a Thai salad similar to this, called Yum Woon Sen.

i was excited to see you make this today because for the last couple of weeks i've been seasoning my meal-prep chicken in a similar way. i marinade the chicken in gochujang, soy sauce, onion powder, garlic powder, ginger, and sesame oil. i put them on a rack in a convection oven and they get nice bits of char on the edges from the soy sauce. i made this today pretty much as you have written (although i used thighs because chicken breasts are gross), but didn't include the noodles because i have those stupid glass food prep containers sized in no-way shape or form for humans, and was pretty much convinced that i wouldn't be able to fit all the food inside the containers i have. sadly, i was right - maybe next time i'll just put the noodles in a separate container and use as needed. all the same, everything came together nicely and i'm looking forward to my lunches this week! thank you kindly!

I made it! Awesome. I had to use pancit noodles cause that’s all I could find. Added a bit of fish sauce and Sambal after tasting. Next time I’ll add some crushed peanuts. I can’t say how long they will last in the fridge because they were eaten in two days by my teenager. Excellent!

Love dishes that work cold, currently working my way trough the noodles dishes you've made before seeing if they work without heating. Since I work from my car I rarely am at a place where I can go and heat my food (try to avoid doing it at customers places since they tend to always have more work to interrupt my lunch).
