Hi Rahul from Missouri (St. Louis)!! Just some trivia: Jello makes a cheesecake flavored pudding that is sugar free. Instead of sugar substitutes like Stevia, I use a box of Jello. If you can't find the cheesecake, vanilla works too. I usually add about 1/2 cup of milk so it will set up. The cream or cottage cheese has moisture, but I add the milk to be safe. About 2 tsp of lemon juice will bring out the cheesecake flavor too!!! Love your vids!!!!!! PS. I still haven't bought any oat flour!!!! 🙂🙂😁

I just use a regular flan recipe - milk, eggs, pinch of salt. Instead of sugar, use sucralose which, unlike most sugar substitutes, caramalizes (it's a stereoisomer of sucrose). It's a little less sweet than sugar, which I prefer, but you can always use a bit more if you want (10-20%).

The raw egg thing is more for store bought pre mixed cookie dough. It's significantly less dangerous when you're making a dough or batter at home. The reason for this is because hundreds of eggs go into the mixture at a factory where they make dough products compared to when you're making it at home you're never going to even get to a dozen eggs.

Tip: I've made this cheesecake multiple times & discovered that it's easy to underestimate the amount of cottage cheese. I was adding the 224g to my blender but when i added it to my mixing bowl with the other ingredients, i lost a lot to the blender. I suggest blending 300g of cottage cheese then measuring it with a food scale as you add it to the mixture. Another tip: a few drops of chocolate syrup dragged across the top is 💋 i was wondering if anyone has made a chocolate syrup from a chocolate protein powder or cocao maybe. That has better macros than the zero sugar Hersheys i used.

2:14 ??? Alcohol evaporates, but how does that give you less vanilla flavor? As far as I know it's not the alcohol with the vanilla flavor, it's the junk dissolved in the alcohol and that remains even if the alcohol boils off. Additionally, why would this not apply to imitation vanilla extract? Imitation vanilla extract is vanillin (the main compound resulting in a vanilla taste) diluted in water, alcohol, and/or propylene glycol until it's a similar flavor and consistency to real vanilla extract. Water, alcohol, and propylene glycol will all boil off when baked as well. And still, it won't decrease the vanilla flavor. Though I agree in using fake vanilla because it's like 1/10th the price where I live for a result that I can't distinguish, but definitely not for the reason you stated.

@@davidtv2224 Depends how you eat. Of the three macro nutrients Fats & Protein are essential, carbohydrates are not. You can live perfectly healthy with zero carbs, but you will die if you don't eat fat and protein. If your in ketosis than fat has a real purpose, it is your main energy source. Since I eat zero sugar the sugar for me is actually of no real purpose.

You only need about 30-50g of fat (depending on size) to maintain critical body functions. Anything beyond that is preference to be honest. Some people run better with lower carbs and higher fat and some with low fat, higher carbs. Fats are easier to overeat too because of the caloric density. I for example can easily crush a pound of almonds or cashews with minimal effect on hunger. Everyone should have high protein though. Like at least .8g/lb of lean body mass for satiety, thermic effect of food and protein synthesis.

Well it turned out okay... It just tastes like my protein powder (I don't know what else I expected). The texture is somehow dry and wet at the same time. Imo the CTC "crust" doesn't add a whole lot so I could've left it out to save some calories. I used erythritol, but didn't know how much to add so maybe I put too little. I think it would be better served with some berry sauce. Honestly, I don't know if I'll make it again, but it doesn't feel like I wasted my ingredients and time so that's a positive

Pistachios are really high in calories, all nuts are. I think a few on top wouldn't throw it off much if you want the flavour, that or put an extract in it. I'd stick to the cereal idea for a crust or something similarly light, but crunchy.

I'm trying to make it today and I'm using a blend that has a mixture of both in it, i normally only drink legion but their vanilla is out of stock right now so i picked up the Jocko brand vanilla at Walmart while I wait for my legion order to come in. @@nataliewestbrookart I just thought of this, casein makes it set up well so if you don't want to use it, then try putting in some sugar-free vanilla pudding mix, xanthan gum or guar gum, something like that to help it set up better. I bought a package of xanthan gum for my ninja creami recipes, at Walmart for like seven dollars but you only need to use about 1/8 a teaspoon so it will last forever. I know some people have demonized those ingredients, but they're really not that bad. I personally would rather eat those once in a while in moderation, then be overweight lol

There are pea, soy and some other alternatives, but texture/baking wise, I am unsure if they do the same thing. It seems difficult to replicate the chemical reactions in baking with substitutes, but you could look for some recipes about vegan/vegetarian protein cheesecake and check if others have come up with solutions, such as xanthan gum or similar type things to deal with texture/solidification.

@@vixxcelacea2778 Thank you for the tip. I have xanthan gum that I can readily use. I also got some MRE lite protein powder and will test it out to see how it fares (it's a blend of non-dairy proteins)

I love fat free cottage cheese! Have to buy a brand name. Great Value is okay, but the texture and taste is better with brand products.

Looks interesting but not with fat free dairy , that stuff is bad for you . Also no to the Splenda , use Stevia or allulose.

I will never use imitation vanilla..artificial vanilla is usually derived from, uh, less-than-organic material (like petroleum). While it mimics vanilla’s smell, many would argue that it doesn’t come close to capturing all of the complex floral and woodsy notes that result from the myriad of other flavor compounds in true vanilla. burning off alcohol doesn't diminish the vanilla notes, it enhance the actual bean flavor. Your video is cool but I prefer organic foods including real cheesecake.. too many artificial ingredients mess up your gut flora and you do not digest proteins, vitamin or minerals properly!

I wonder then, if the better thing to do, if the vanilla flavor evaporates during baking, is to mix the vanilla into some type of frosting/topping to put on at the end 🤷♀️
