LEARN HOW TO MAKE AN EASY QUINOA + VEGGIE BOWL RECIPE TONIGHT!
LAY HO MA (how's it going in Cantonese)! This veggie bowl is easy to whip up and it's an absolute crowd winner. Join me in this episode and learn how to make this delicious quinoa and vegetable bowl recipe that's also fantastic for feeding a crowd. Let's begin!
Ingredients:
1/2 cup quinoa
1 cup water
150g arugula
50g parsley
2 mini cucumber
1/2 cup olives
400ml canned hearts of palm
400ml canned chickpeas
1/3 cup hemp hearts
1/2 red onion
1 tsp + 2 tbsp olive oil
350g cherry tomatoes
1 lemon
1/2 tsp salt
pepper to taste
Directions:
1. Place the quinoa into a small saucepan. Rinse and drain, then add in 1 cup of water. Heat on medium high heat
2. Add the arugula into a large mixing bowl. Coarsely chop the parsley and add to the bowl
3. When the water to the quinoa begins to bubble, give it a stir. Then, cover and cook on medium low for 20mins
4. Dice the mini cucumbers and add to the bowl. Slice the olives and add to the bowl. Chop the hearts of palm into bite sized pieces and add to the bowl. Rinse and drain the canned chickpeas and add to the bowl along with the hemp hearts. Thinly slice the red onion and add to the bowl
5. Fluff the quinoa and let it cool for a few minutes
6. Heat up a nonstick pan to medium heat. Add 1 tsp olive oil followed by the cherry tomatoes. Allow the cherry tomatoes to char for a couple of minutes. Give them a toss and allow to char again for a couple of minutes
7. Transfer the quinoa to the mixing bowl. When the cherry tomatoes begin to blister, transfer them to the mixing bowl. Add the juice of 1 lemon, salt, pepper to taste, and 2 tbsp olive oil. Mix to combine, then plate to serve

This looks just delicious. I am very MUCH against using hearts of Palm, so I will use Artichoke hearts in their place. Your videos are just fantastic, so hoping my palm heart message does not offend anyone.

@@queen_of_green420They are hemp hearts or also called hemp seeds. High in protein, omega 3&6, and fiber. I put them on just about everything I eat or blend them in my protein smoothies. I buy the Manitoba Harvest brand. Fresh and delicious!

​@pblonrongracie on Google it says that harvesting the core from a palm tree with only one stalk means the entire plant dies, leading to deforestation and destructive monocultures. In some cases, species of palm trees are reaching near extinction.

Perfect recipe for the fall season here in North America! I sprinkle hemp hearts on just about everything I eat! Excellent source of protein, omega 3 & 6 and fiber. I love blistered plum tomatoes! There are several great comments with alternatives for the hearts of palm! I’m going to try it with avocados and pomegranate seeds! Happy Sunday ❤

You out did yourself in this dish! Those cherry tomatoes took my breath away sooo succulent and delicious looking. If I was making this dish i am not so sure all of the cherry tomatoes you had would have made it into that bowl. I love cherry tomatoes right off the vine. Great dish!

I made this with a couple of changes and it was delightful. Been eating it for a few days as it kept well. Didn't have enough rocker so included chopped kale and baby spinach. Couldn't find palm hearts so used artichoke hearts. Don't like olives so included some chopped black garlic. This is a great and super easy salad. Thank you ❤

Made this for lunch today. Best salad ever! ⭐️ 🥗⭐️ So many flavorful ingredients that work incredibly well together. This is an instance where the whole is greater than the sum of its parts. I did substitute avocado for hearts of palm, but kept everything else the same. So delicious! 😋

Yum! I'm planning on taking quinoa salad to my cousin's 90th BD party - this looks like a winner! I love the idea of sautéed tomatoes - I often chop and salt tomatoes, then add fresh basil and let that marinate a bit to use as dressing - this is a lovely option!

I tried so many of your recipes, and not a single one was disappointing. This one is another winner. But did you miss the oil? And one more question about the liquid of beans in the can. On the can, it says that it's a liquid where beans are cooked. So why is it required to rinse beans off it? Also, you suggest using it for mayo. Just want to know your opinion of a wonderful experienced cook. Thank you.

I find 2:1 water to quinoa ratio gives a mushy quinoa. 1.5:1 on the other hand gives a mire fluffy texture.
