This is a perfect week night meal served with a side salad or for lunch. (I’m not a vegan ) I use to go to a steak house near my office and get a loaded bake potato ,no bacon, with a side salad. I brought my own walnuts. So filling , so good. LOADED.

This recipe thought me a lot. This was my first time roasting my spices in olive oil, and it gives such a good base to start off with, I'm definitely doing it again for other recipes in the future. Baking sweet potatoes this way is lazy and still turns out amazing. Trying this also thought me I shouldn't use my Blender with the walnuts, I couldn't get them to circulate correctly. It was also a pain to clean afterwards 😅 Gonna do it by hand next time. I did a minimal amount of modifications until the "Tahini". Substituted the Oregano with Basil and left out the all spice as I didn't have any. Tahini is something I've never seen around my part of the world and that I didn't research on how to make myself, I just decided to wing a dressing with what I had at home and ended up doing a mix of Mustard, Honey, and the lemon juice. Totally different consistency, but it wasn't bad drizzled on top of the potatoes/walnuts. The second time I try this, I'll not make any cream at all tho. Just the spiced walnuts on top of the roasted sweet potatoes was already so good, it felt like waste to add on top of it. Thank you very much for the recipe Andrew, this will definitely be my go to when I end up having walnuts at home again!

I made this last night and used regular chili powder. I thought a bite of sweet potato with the walnut chorizo was good. And, the bite with sweet potato, chorizo, tahini sauce and jalapeno was absolutely delicious! I will definitely prepare this again but with the ancho chili powder. On a side note, 8 dollars for 4oz of pine nuts is insane!

I think a good protein swap would be beans of some type, like pinto or lentil. I frequently use beans in sweeter dishes, think like some Asian desserts.

This recipe has tahini. I love all recipes with tahini. It just makes everything so creamy. I love your spice blends. I have to buy the chili flakes but I have all the rest. Lovely recipe! I usually jumpstart my potatoes/sweet potatoes in the micro for 3 minutes or so and then finish them by roasting.

This reminds me as a little kid put tin foil around the potato and put it in the fire place makes the house smell good and the potato taste so good with out anything on top. I'm try this recipe out. I like pumpkin pie as a kid but now I just bake it for people but I don't eat pies anymore really.

Thank you!!! Black beans can be use but also come with a flavor on there own to consider. You could also try using lentils. They are more neutral in flavor and may take on the seasoning profile a bit better.
