It's not often that only one video will convince me to sub to a channel, and this is one of them. No unnecessary and obnoxious thumbnail & intro, no hastily recorded, haphazard play-by-play instructions or voice-over, no interruptions to remind us to like and subscribe. Just straight to some of the cleanest content. I love this because it made me want to cook and it made me want to make something with this much love and care going into it. I found comfort and inspiration here, thank you Andrew.

I really don't eat enough veggies and I get nervous when I test out new recipes. I recently found you and I'm grateful. You teach in a very slow, calming and precise manner. Simmering = abracadabra! You inspire me to use more coconut milk! I think the only other spice I would have thrown in... cinnamon. Cinnamon is great with sweet potato and black beans. It also does something special when paired with sriracha. Did you know a cup of baked sweet potato gives you 285% of your Vitamin A for the day, 23% of your iron, 37% of our potassium and 58% of Vitamin C. Such a power house. And 1 cup of black beans provides us with 47% of our fiber, 50% of our iron, 60% of our folate and provide us with 14 grams of protein! AND..... CONGRATULATIONS!!!!!!!!!!! Stay amazing! PEEAAAAACCCCCCCCCCCCCE!

Pinned this one for later, looks great! For folks who don't like or can't use coconut, Country Crock came out with a plant based (lentil based) heavy whipping cream. I just came across it a few weeks ago and have used it in soups, etc. It's really good, and should be a great swap for the coconut milk.

I cook professionally and i gotta say, this recipe is bangin! You explained the caramelization process perfectly and I love that you added in the purpose of the salt. Also, the you need a seatbelt for the butternut squash bit had me rolling😄 Thank you for sharing this one!

I don't consider myself a vegan but, I eat a lot of vegan meals. This look amazing and I am actually making it now for my lunches at work. I work 12 hour shifts and it is easy to have meals at the ready to just toss in my lunch bag. Here in Washington, the weather has taken a turn to stormy, rainy, and cold. This will be my warm hug!! I made it last week without the cinnamon and it was absolutely delicious. I didn't realize I didn't have chili powder and only had cayenne so I just substituted and it gives the stew a little kick. Omg it's absolutely amazing. Today I wanted to try it by adding 1tsp of cinnamon. It adds a nice little extra bit of flavor 🙂

I have almost everything in my kitchen/pantry for this recipe... except that my sweet potatoes are in a can... I'm gonna try rinsing them really well and see how it works. I'm trying to us up the things I already have on hand. I made a big pot of black beans for some chili and I wanted to use up the cup of beans that I didn't use. This recipe looks amazing. I am not vegan at the moment. I learned a lot of really good vegan recipes when I was. It is a fantastic way to learn new ways to use different foods.

I was thinking of adding Swiss Chard or Spinach to this...I know what you mean regarding the shapes of sweet potatoes...some look like modern art but the real talent is how to peel the darn things and step away with all your fingers!! Might be sacrilege for the vegans here but just got done cooking a meat-containing variation of this that seemed to turn out pretty good. Brown 2lbs of grass-fed beef first, keep the fat in. Then throw the garlic and onion in to sweat for a bit. Used a rice cooker to cook 2 cups of dry rice with beef broth. Get the rice started first so you can throw it in once you are ready to simmer everything. If you are lazy (which I am) you can use a creole spice mix (has most of the spices needed in there) and mix that with some powdered cumin and thyme. I used almost another whole container of beef broth when its time to add the coconut milk in. Think I had it simmering for about 30-45 minutes the sweet potatoes cooked alot quicker than I was expecting.

I stumbled upon your channel probably because I watch vegan channels. I watched this particular recipe a few times and today I made it. I can't even begin to tell you how many warm hugs I got from this dish!!! it is sooooo delicious that I had a double portion. I had to cut the dosage to "half" since I live alone. Still some good leftover for tomorrow. I love your interaction at the end of the recipe in explaining the nutritional value of your dish and small information that I didn't know like adding salt to the onions alone, before adding the rest of the spices. That was interesting. Learned something new today. Thank you so much for this dish full of hugs. It literally warmed my heart, especially on a cold and rainy day like today. wow wow wow!! I made this but with a few ingredient changes and it was absolutely AMAZING!!!! I used lentils instead of black beans and kabocha instead of sweet potatoes, I also added berbere spice along with the smoked paprika!! its a new family favorite!!! thank you so much Andrew Bernard for this delicious recipe!!

Saw this yesterday for the first time. Wife made it for me tonight. Wonderful! Nice flavor. I asked her to smash the sweet potato into the stew for more texture. I'm going low carb/no carb for the most part. So no rice to go with it. Going to try it smashed and mixed tomorrow. Can't wait!

i made this when i didnt have any chicken left and i wanted something easy. This was DELICIOUS! I didnt have too many sweet potatos left so i substituted with frozen butternut squash. Took it as my meal prep too with quinoa. Next time I think I'll add some spinach/kale for a little more green.

instant new subscriber, to a fellow cooking bro. the vid and recipe were just spot on, talking only after the food porn, and not rambling on needlessly to pad play time. *chef's kiss" i only got one subtle addition: if you can get your hand on it where you live, use pimenton de la vera. it's the ultimate smoked paprika. grown at the foots of the estremadura, the whole ripe peppers are dried low and slow in little barns over smouldering oak logs for 10-15 days. the aroma is incredible, and it's really affordable.

I love this recipe ❤ I've made it so many times and it comes out perfect each time. The spices with Sriracha perfectly balance the sweetness from the sweet potatoes potatoes and coconut milk.

I made this tonight AND IT IS SO SO GOOD. I’m not vegan, more so vegetarian and am new to cooking without meat. (In small town Nebraska, meat is served with EVERY meal.) This was not only easy but SO good. Just shared the recipe with my family

This dish is so MUTHER FLIPPIN DELICIOUS!! Andrew, you’ve done it again, thanks for the healthy, hearty recipe. This is so COZY. So, the thing is, I added 1.5 teaspoons of smoked paprika instead of 1.5 tablespoons of it, as the recipe stated. And I have to say, it was perfect with just 1.5 teaspoons. Much love to you, and keep rockin it!
