Yazz, I'm earlier again this time. Its kind of relief seeing that banana leaf still abundance near ichang house. That means more great content guarantee!!! Tips for cleaning seafood to get rid smelly ocean smell, use citrus fruit like calamansi or lime to scrub on it belly/skin. It works every time I'm doing it.

OMG Jimmy and Ichang. You guys are just fabulous and fantastic! I too got a recipe for my Ikan Bakar, but it is different from the way you prepared .Nevertheless, the most important part is the end result....it must taste DELICIOUS...I can see yours is very delicious too. The Assam sauce is the ultimate ingredient that will bring out the delicacy of Ikan Bakar. If ever I visit China next year (after Covid 19 Pandemic is over ) I want to invite both of you to my Chinese girl friend's house in Xiangyang, Hubei Province. I promised her I will show her my Malaysian Ikan Bakar skill. FYI, after my retirement from Government service , I opened a Ikan Bakar stall in a public fishing recreation area . Anglers will bring in their catch and I will grill the fish for them and charge them for the labour charges. But I stock mainly Ikan Pari , sotong, mackeral , kembong, while the anglers will bring their catch, mainly Barramundi (siakap) and Jenahak ( Snapper).

PARIIII!!! OMG!!!!!!! MY MOUTH ! Edited as I watch: We use to grill them together with the skin, usually the stingray's skin here not so thick, therefore once grilled its very easy to peel of the skin. You even bakar the belacan haha you are more local than you realise.

The smaller ray is more tasty. I was a fisherman for a short while. Just take from the sea, cut and grill. Don't even need the extra sauce. Naturally sweet and salty!

Usually when I cook sting ray I would wash it with Asam Jawa + water (the measurement depends on the amount of fish you have) - it helps remove the strong smell of the fish since it is naturally slimy. Cheers to you guys!

Hi, Lydia from Malaysia here. For your info iChang and Jimmy the sambal paste become orange because you blend those ingredients with oil instead of water. If you wanna your sambal paste look red colour, blend it with water next time :)

At 1st i thought u were going to cook ASAM PEDAS, until u added turmeric powder into d paste. Turmeric turns d colour; slightly orange when u mix it with chilli paste. Turmeric+coconut milk produces creamy yellow paste. As for the AIR ASAM... Air asam ringkas (ringkas=simple) Air asam mudah (mudah/senang=easy) Air asam untuk ikan bakar (untuk=for)

So my suggestion to both of u, either u guys set up a Malaysian restaurent in Hong Kong/Japan or just bring your ass here and become Malaysian...!!! Lol🤣 My other suggestion : if u wanna make your sambal darker and more delicious, u must sautee sugar till it look brownish before u put all the ingredients from the blender. "Air asam" that u made was too thick, put a bit of water so that your "air asam" will not too sour 🥰

Hi, nice one as usual. just wanted to point out the sauce is named just "Air Asam". Senang = Easy Untuk = For so "Air Asam Senang Untuk Ikan Bakar" is roughly translated to Easy Air Asam for Roasted Fish (Ikan Bakar). make some more, its a great addition for anything rice, really.

Yum ikan pari bakar. 🤤 You can try "ikan pari bakar ala portugis". "Asam pedas ikan pari" is good too. For the catfish, you can try "sambal ikan keli" or "ikan keli masak lemak cili api". I love fish dishes. 🐟🍛

Next time you guys come to malaysia, Go to muar in johor. It's like about 2.5 hours from johor bahru. Muar is the best place for breakfast, lunch and dinner. For ikan pari bakar, you can go to medan ikan bakar sabak awor. It's the best seafood paradise. And don't forget to order for sotong goreng tepung too. It's the best combination for me.
