Pro tip: keep your pan on high the whole time, add meat first to render out fat. Then add veg and rice so that they can fry in that fat. Let your rice rest and sizzle. This carmalizes it and deepens the flavor. Then add the egg once the rice has some color as not to overcook it. Edit: adding a bit of seaseme oil to your meat helps out with flavor a lot as well. Add a bit to the meat to start, and a bit at the end as well to mix in. If you are feeling really adventurous, add a dash of Chinese Five Spice

Tip for rice: it's recommended to use leftover rice, or rice left over night. This is necessary as this will help make the rice survive the frying process. You can cook rice and leave it in the fridge for a few hours, that works.

Homemade fried rice is never as good as takeout because the flame of the stove is never high enough to char the rice which adds smokiness to the dish. Do you notice how the chefs tip the woks towards the flame when cooking fried rice- the direct flame makes all the difference in the flavor.

I'm Nigerian but here's the secret tip to get that smokey flavor..... Lower the heat and wrap the pot with aluminum foil paper and cover the pot with a lid. You'll trap the heat and smoke inside the pot and that'll do the actual cooking. 😉 You're welcome. Also try "jollof rice" if you've never had Nigerian food. Very good

I don't use packaged MSG. Soy sauce, sesame oil, garlic, ginger, green onions and salt all have natural MSG and the flavor is just as good. I know it's in a lot of pre packed foods, but I have never intentionally used it. The food always plates up delicious.

Go easy on the oyster sauce, it’s strong. Can always add more toward the end, but difficult to balance it out if you put too much at the start 🙂 Easy on the salt if you use light soy sauce too, and the dark soy sauce is mainly for colour, not taste. All the best!

General logical guideline to follow when making a successful *"FRIED RICE"* recipe, with various options to choose from, before, during and after *"mise-en-place",* including for the EGGS & the RICE, and particularly during stir frying preparation. 1. Do organize *"Mise-en-place",* first, cut all large ingredients into approximately 45° (degrees) angular diced-sized slanted cuts, as needed, before starting your recipe. 2. Heat a sizeable wide, slanted pot. 3. Set Heat controls. 4. Use high-smoking point oils, fragrant quality. 5. Heat pan to smoking point. 6. Pre-heat enough cooking oil. *7. NOTE* 4 options to add, or not add, *EGGS:* *a.* Use no eggs at all; or *substitute* other proteins. *b.* Separate egg yolks from egg whites to be stir fried, but not at same time. *c.* Blend egg yolks into cold pre-cooked white rice to turn rice golden color before stir frying. *d.* Season separated egg whites a little, and whip gently to blend, before stir frying them into rice mixture. *e.* Stir fry whole liquid eggs mixture until eggs coagulate to medium-hard little clumps of golden egg beads. *8.* Pull coagulated eggs to cooler sides of pan; 9. Stir fry precooked unsalted rice in hotter center of oiled pan. 10. Continue to Stir fry rice to mix in with egg beads. 11. Pull rice & eggs mixture to cooler sides of pan. 12. Stir fry, in center of oiled hot pan, aromatic vegetable spices: shallots, onions, shredded ginger, shredded garlic, shredded chili peppers. 13. Reduce heat to incorporate fried spices mixtures, gently not to burn, into rice & eggs, mixing, pull to cooler sides of pan. 14. Stir fry in, any array of vegetables, parboiled to retain color, 45° angle diced to expose more surface, of colorful fresh regional vegetables: ..., bamboo shoots, bell peppers, baby bokchoy, cabbages, carrots, corn, fruits, green peas & pea pods, mushrooms, sprouts, water chesnuts, et cetera ... 15. Stir fry in, bite-sized pre-cooked, aromatic proteins: bacon, char siu, clams, crab meats, fish, fish eggs (caviar, roe), ham, lobster, lobster roe, meats, mussels diced, scallops (bay scallops), seafood mix, shrimps, spam, et cetera, to taste. 16. Stir fry in, fragrant seasoning oils: sesame, mustard, coconut, chili, into rice mixture, ... 17. Stir fry in, seasoning sauces: mildly salty soy, oyster, hot pepper, hoisin, into rice mixture. 18. Turn off heat. 19. Stir fry in bits of aromatic fresh herbs: Thyme, Thai basil, scallions, oregano, green onions, garlic scapes, dill, chives, et cetera, without heat. 20. Stir fry in a few drops of acidic liquids: Lime juice, Meyer lemon juice, any flavored vinegar. 21. Stir fry all ingredients gently to bring in and distribute all colorful morsels, with, raw 45° angle diced green onions, and some crispy fried crushed seasoned onions for added flavors, evenly together in pan (wok). 21. To make Chinese rice like the take out is to massage Dark soy sauce into cold cooked rice that’s fairly hard.. then fry it in oil that’s super hot.. sugar and oyster sauce is a NO NO!

Tonight I cooked for my mother and I I cut up some pork medallion into small bits. Cooked it and put it in a bowl. Took some rice microwaved it for about 2-3 mins longer than normal Got my cast iron ready with seseme oil Once the rice was ready I threw it on for a few mins then added the pork. Waited a few mins then added egg Turned out absolutely amazing Had it with naan bread I didn't have day old rice so the microwave came in clutch. Can pretty much replicate the propertys of day old rice by cooking the rice for a few mins at a time adding water when needed

Except putting white parts of the green onions flavor the oil and the white parts don't burn/wilt as quickly as the green parts so yea put white parts of green onion first (watching uncle Roger has ppl thinking they're experts on fried rice lol no)

If you have *sweet* oyster sauce, *sweet* carrots, fresh *sweet* onions, zesty *sweet* scallions & soft *sweet* green peas, why add processed sugar? Instead, add crispy, freshly diced, peeled, *sweet* water chestnuts; mild *sweet* pears; *sweet* apples; or even some types of *sweet* mushrooms.
