I’ve been trying to perfect bread making for what seems like a million years...... OMG, THESE ARE IMMENSE. Other half came home from work and said you’ve not made those!! Brilliant..... thank you 😊 I😊

Thanks yet again Kelly! Still making this after all these years. I have found none better, and everyone raves over your Simple White Bread loaf (same recipe I know!) Making the Tiger Bread Rolls this afternoon, ready to take to a mini ex-work colleagues get together tomorrow. (Only 5 of us and I am the ex one, the rest are still working, bless them!) My mate, the host, is making Asian Pulled Pork so these will go down well. Mouth watering already LOL Hope all is well with you up there, Steve

Hello Kelly, I’m not sure if you will see this message as it seems I’m a bit late to the party. It’s late, but I didn’t realise the time when I started 😢. I’ve tried loads of different recipes but this is absolutely amazing. I have never felt as proud of the end result. This is due to you and how you explained everything making it sound achievable. Good day to you Kelly, I'm not a big fan of crunchy rolls but they looked amazing and knowing I can use the same recipe for a soft loaf or roll is even better !! Awesome video today !! Well presented and edited !!

I made these today and they turned out wonderful. Thanks for the recipe. The only alteration I made was to add a teaspoon of improver to the dough. Next time the only thing I would change is to cut the dough into 8 or 10 pieces because my 6 rolls are bigger than any bread roll I've ever seen.

@@KellysKitchenGarden they came and went on Sunday, will be doing them again they were loverly. the bread mix is the same as I use for Scotish morning rolls but when shaped and risen gently push them down with 3 flat fingers and make sure they are well flowered, makes a softer bap like crust. PS did your slow cooked chili the other day, but with sweet potato and parsnip as that is what I had to hand, it was fab and half in the freezer for another day. thank you so much for the recepies

Just come out of the oven - not as pretty as yours but my oven is iffy (my excuse!). I think I'll do 3 tablespoons of sesame next time for the coating. Just about to do the Minestrone Soup to go with the rolls.

This came up on my homepage suggestions just now. I thought you were going to make a type of bun topping a Mexican lad showed me when I was baking in the Cayman Islands. The topping was made from veg oil flour and sugar. It came out like a sweet shortbread and was surprisingly tasty. I've had a sourdough starter on the go for a few weeks now and have been making sourdough doughnuts, baguettes and I'm making burger buns right now. Simplest sourdough recipe is 5 parts bread flour, 3 parts water and 2 parts sourdough starter (80% hydration). mutiply the total weight of those ingredients by .01 to get the weight of salt.

I love making sourdough! Must admit I’ve not used my starter for anything other than standard loaves though. Sourdough burger buns!! Superb 👍🏼🍔

@@KellysKitchenGarden I did the same recipe as above with the same proportions of milk powder, sugar, and veg oil as the salt. I also added a good pinch of vitamin c powder. The flour weight is 150g strong bread and 100g plain flour.

Kelly's Kitchen Garden I made it and it was perfect ! The only thing I have to ask is you add a tad of water while mixing the dough and then a tad more rice flour when making the paste. Are those measurements added to the beginning list ?

Made these today and they were enormous. My dough mixture weighed 859g so each of the 6 dough balls weighed 143g each and I had to bake them for 28 mins. Think next time I will make 8 at 107g each. Not sure about the topping quantities. I used less than 50ml of water, 3 teaspoons of sésame oil and still runny so added a further 2 teaspoons of rice flour. Will modify ratio till it comes out right. Haven't tried them yet so hoping the 30g of sesame oil instead of butter gives them the flavour I like.

Made these today & they were fab and soooo crunchy. They were huge rolls ! Take it I could divide into smaller sizes but bake less time or same time??? Thank you for sharing & fab video! 👍👍

Yes! Absolutely! I should have really mentioned that we like giant rolls, but other folk have found that splitting into 8 makes ‘normal’ sized ones 😂 Just knock the time down by a couple of minutes and just keep an eye on them. The usual tap on the bottom and listen for the hollow sound 👍🏼

Your oven temperature is that for a conventional oven ? I have a fan assisted so it would be 180 degrees for us then ?

Out of curiosity, have you tried putting the tiger breat paste on a pre-made loaf? would that work? But I see tiger bread pizza is a thing now! :)

Thank you for your well-described video! I don't have a mixer, plus I've never made bread before. However, is a food processor okay to use? Or do I need a special one for bread? Or can I just my hands? Look forward to your reply. Warm regards Lou

DAISY LOU Hey there! Thanks for watching. I use a mixer because, quite frankly, I’m a bit lazy. It is so much better to knead by hand. So get stuck in and give it a good 10 minutes of stretching and pulling until the dough feels smooth. There are tonnes of great videos on here that will give you tips on kneading too. Let me know how you get on ☺️

These look INCREDIBLE! Is it ok to make the topping at the point you did (i.e. before the two proofs), or should I make it closer to baking?

You can make it whenever is easiest for you. I like to have t ready before the second proof so that the moment they’re ready to go in the oven I already have it all made up 😊

This recipe without the topping makes lovely soft rolls. I use the recipe as a basic white tin loaf as well. Makes beautiful sandwiches and toast :)

i tried this but the rice four mixture wouldnt go thick no matter how much rice four i put in ... could you please tell me is this normal rice flour or Glutinous rice flour your using. as there are to types one Ie glutinous rice flour makes things like sweet mochi or is it the plain rice flour.. thank you. ? tried twice now adn both times left for over 30 mins and still watery paste.. thanks again .

I love this bread and can't wait to make it ,but is a tbls of yeast right. I just thought that 7 grms is what u need for 500grms of flour.I'm a novice just looking to get it right

It’s the lack of gluten in the rice flour that causes it to crack the way it does. I’ve honestly not tried it with any other flour. If you have a high powered blender, and don’t have rice flour, you can make your own. They also make beautiful rolls without the topping ☺️🌱

You can, but you won’t get the distinct flavour that you get from the sesame oil, which is what this particular bread is known for. It will still be delicious though ☺️🌱

William J. Wyner Oh my word, your comment has made my day. I really hope they turn out for you. I’ve been making bread for a while, but I had a few hiccups in the beginning, but I didn’t give up. I tried to make the recipe as easy to follow as possible. I did mention about adding a bit more sesame oil to taste. The initial bake I did wasn’t quite strong enough for me. I hope you’re all well, safe and healthy ☺️🌱

Most excellently engineered. I have taken copious notes and procured the necessary ingredients which I shall add to the culinary supplies of the Secret Survival Bunker, (SSB) hidden deep in the Australian Outback. Upon the breakdown of human society bought on by the consumption of waaaaay to many macdonalds hamburgers and watching too much idiotic fatuous drivel on the television set and when the remaining inhabitants of Australia are eating each other to survive (because they won't know how to feed themselves when the supermarkets close down), I shall be relaxing in the sun and eating jam sandwiches made from your delicious home made tiger bread. Wanted to ask you how do you keep them fresh ? The thing with home made bread next day it's not so good . But by the look of them they wouldn't last a day lol 👍👍👍👍👍

deadly 0101 They certainly don’t last very long! A good was to crisp them up again is to pop them in a reasonably hot oven for a few minutes. That’s how I’d refresh them. They freeze well too.

I just made this recipe and it’s not great. The ratio’s of ingredients is not good, the bread ended up looking roughly acceptable but has a poor texture and didn’t rise very well. I made a loaf, and i have to say, this is not a good loaf recipe. It might be ok for buns or rolls though. I will experiment and try to make it good.

madaxe79 Thank you for your feedback. And although yours is the only negative one I’ve received, it’s good to get other people’s opinions. So far as poor rise and poor texture... I think perhaps there may have been other factors at play rather than the ratios. I use the same ratios in my sandwich loaf recipe and I’ve had very positive feedback. Kelly's Kitchen Garden thank you. I Bake often but have never tried a recipe like this before, however, the bread did rise just not like I expected. I will have a play around and alter some variables to try to get it to work out better for me. I found that the finished product was very dry near the edges and very moist in the centre, so the outside was almost overcooked and the inside almost undercooked. Nothing like any of the bread I’ve baked in the past. I believe the issue might be the sugar quantity (or potentially the fact i used raw sugar). I will try again with a different sugar to yeast ratio. Also it’s possible my milk mixture may have still been a bit cool, I compensated for this at the time by letting the yeast activate for around half an hour or so, but they yeast was obviously active, and i did get a rise. Anyhow, I’ll try again and see if i can get it to be how i want it. Another thing to bear in mind, I’m in Australia, so the “tiger bread” I’m used to is probably vastly different to the stuff you’re used to, so to me it seems unusual, when it probably turned out perfect for what you’re used to. The rice flour top worked well, so great work on that, i just have to fix up the texture and it’ll be great. Thanks for the video

I’ve learnt that there are so many factors that affect baking bread, and like you say, it’s finding what works best for you and also suits your taste. What I will say though, is that I never experience the unevenness in dry to undercooked. So maybe it’s due to one of the things you mention. I really hope you find your perfect recipe ☺️🌱

Kelly's Kitchen Garden me too. I really think it would make perfect buns like you have made, the outside would be crispy and the centre light and fluffy, but the size and thickness of the loaf just didn’t work for me. I’m thinking (now I’ve had a lot more time to reflect) that it might be a amount of fat. Fat in the milk and the huge amount of butter. I’m going to cut down on the fat content and the sugars next time and I’ll post back what i find

@@ClaudioSilva-tw4lo what? It’s a username. No need to immediately resort to insults is there. Can you please prove that this was used in Vietnam before the Netherlands? I cannot find a single instance of cracked Vietnamese bread. If you can provide a source I’ll gladly eat my words (and bread). If what you’re taking about is Banh Mi, that’s a baguette, not tiger bread, and does not contain rice flour. It’s essentially a myth. The myth states that rice flour is used in the DOUGH, not as a topping, so even if it were true, it’s not tiger bread. At all. Tiger bread contains no rice flour in the dough and Banh Mi has no rice flour topping. Please refrain from being so rude when you clearly don’t know what you’re talking about.
