I make my own broth, too. I use pigs feet in addition to marrow bones or leftover bones for my broth. Every video you make is excellent, young lady. The name of your home makes me think of you as a Celtic princess with that beautiful red hair. Don't pay no mind to me...I'm an old goat with a great lady. We both cook and I like this recipe and mean to try it.

I think I am going to make a slow cooker meal/stew. You could add more variety by adding mixed frozen veggies as the soup/stew starts to simmer it will permeate the flavor through the veggies. Thanks for the great video.

Ja, the wine idea sounds wonderful and i tend to sneak in a little celery and cumin now and again. Up here in Missoula if you want elk, you have to go bulldog them a bit west of here. This recipe is perfect for sugar and starch restricted diets.

Hi Ariel, you are spot on about making your own broth. It tastes amazing, nothing store-bought that I have tried comes close. As for freezing soups/stews with potatoes, I've not really had any problem with it. I leave the skin on (well cleaned, of course), cut in 1 - 2 inch chunks. Like you, I tend to like my soups/stews on the thick side, so perhaps that's another reason I don't see the potatoes degrade much from freezing. What I do notice is that the broth of the stew tends to be a bit wonky once thawed, but the taste is still great. Enjoyed your video, so thank you.

very tasty! looks really good and I've never tasted Elk :P another good oil to use with a very high smoke point as an alternative to coconut oil is rapeseed oil for people who do not want to use a coconutty taste for savory dishes , and it is VERY healthy high in omega 3 oils it is an excellent oil

I LOVE MAKING SOUP!!! and my husband loves it too! Doesn't matter what season it is---a great cup of soup---awesome! And I, like you, add whatever I have for the season...sometimes I'll add something different, like pieces of fresh pumpkin, or sweet potato---just to add a little something--especially if it's really spicy---like to my chili dishes---or curries----looks like a delicious dish, Ariel!! I had elk meat one time & was surprised of how good it was, where we are, there are not a lot of elk, & the ones we have were introduced into the area & still protected..but it is really good meat, you all are lucky to be able to hunt elk..I can eat venison if we work it up because I don't like the gamey taste either..

Well she really is already. I have many good recipes from her and watched her make it all. Plus her gardening skills are excellent. Shes a teacher of many things. Photography, cooking, gardening and living in wilderness....she could really have a long series on PBS for everyone to enjoy. I find this to be relaxing to watch on youtube.

Yum. I seal a meal my leftover soups. The thinner base ones I thaw out and make a rouge and turn them into a stew consistency. Some baguette and a glass of wine, great for a cold night.

This is interesting, Ariel, about the garlic. My impression is that the use of garlic in cooking removes the 'goodness' of it. However, checking the internet, it would appear that chopping the cloves of garlic and leaving them for 10 minutes allows allicin to appear, but I'm still unclear if this is damaged during heating. Whatever, I adore garlic and use a raw puree (in a tube) in my cooking. The great benefit, I gather, is eating the cloves raw (as did a French guy in my long-ago past of grape-picking, but I dread to think what his breath or flatus were like.)

Home sick today, so binge watching your channel! That soup looks amazing.. I notice that generally you don’t use a ton of spices.. (salt, basil..? Maybe I missed others here) but I wonder if you find that the amount of garlic and onions you use, typically generous amounts😉, tend to take care of it? I am asking because I tend to overdo seasonings... and am trying to learn new ideas. Thanks, Ariel!

Hmm.... maybe it depends on what one considers a lot. :) I usually use about 3-4 times the amount of herbs in soups and stews that I see listed in almost any recipe. Different herbs and spices for different flavors. I love the flavor and nutrition added by them and do love onions and garlic as well for the same reasons.

looks delicious. your food always does just a point about cooking with olive oil- it has a high enough smoke point that id does NOT oxidize when you cook with it-but having said that, I actually PREFER coconut oil myself...anyway, another great video Ariel!

Thanks! From what I've read, you are right about really pure olive oil, it does not oxidize at most cooking temps. But the vast majority of olive oils sold in stores, even those that claim to be pure, are often cut with another vegetable oil so I am very suspicious of them. That's my understanding.

I would use venison being from Pennsylvania , however there are a few elk but only by lottery permit. Also, would you give your opinion of cast iron cookware. It is my preference.

ArielI just prototyped this over my kitchen sink I used a selfi-stick to span between the cabinets on each side of the window I used a POV camera bicycle clamp to attach to the selfi-stick shaft I use a POV camera 1/4 screw adaptor to attach the camera to the bicycle clamp Looking at your TH tour vids looks like you don't film between the two cabinets, so you can clamp, C-clamp, heavy pot of water counter weight to secure the selfi-stick to your cabinet. I do forage for wild foods whenever possible! I find serving sizes depend quite a bit on the people eating, their general health and fitness, and food habits. This pot I think feed seven people total.

Each time you run water at your sink I think about answers to the pump noise. Thank you for your kind reply, my cooking skill is about as simple as it gets, if it comes in a can then its a 3 minute meal, if it's a jar of peanut butter (jiff) and potato chips my meal is 30 seconds. LOL I do not like to eat out but I do love home cook meals that my neighbor and her husband cooks up every once in a while. Other than that I will fix some chilly almost like what you have fixed except I do not have elk down but I would love to have elk or venison, instead of this store bought beef 90% lean and I don't really like it either because I don't really know what's in the meat. I am currently in the process of making my own pickup camper mini home. The length is just a few inches short of 16 ft long and is 80 inches wide. I will be installing a small wood stove that I am planning on making out of some 1/4 inch plate steel. The cost of trying to find a small wood stove and then the cost is way to prohibitive for me to try and buy new, so since I can weld I decided to make my own. I making my camper to be able to survive and stay warm in the coldest arctic winter temps of the far north when I start to travel. I making the camper out of full dimension lumber so the camper is going to be on the real heavy side of slide in pickup campers, the reason I building it so strong is to try and keep the large bears out of it when I am not around and I felt that I needed as much insulation in the walls and roof as I could get. my floor is 41/2 inches thick solid and I will have 6 inch walls and 6 to 8 inches for the roof. I making my own solar panels which will put out around 300 to 600 watts of power. I have not decided how many watts I will use eventfully but I can always increase or decrease the wattage as needed. My outside skin for the camper is 26 gauge galvanized sheet metal and I will have 4 small windows for light and 2 roof vents for ventilation I can send some pictures of the camper build if you would like to see what it's starting to look like and ask of you to see if you could make any suggestions for it if you wouldn't mind. I will start to work on the inside after a few more things I need to do to finish the outside of the camper before I start the finish work on the inside. Thank you, Very Respectfully, dd
