Toast Pelle Janzon is one of my favourite Swedish classics. Named after the Opera singer Pelle Janzon, it was supposedly his favourite dish. It's a great surf n turf combination of Vendace Roe and thin slices of Filet of Beef. To add a bit of umami, I added my own twist with a soy cured egg yolk instead of the classical raw egg yolk. If you can't get ahold of Vendace Roe, you can substitute for different roe of similar size, e.g. Lumpfish. I hope you will enjoy this dish as much as I do!
