For those of u who suffer with tg h high blood check the sodium on the store brought oyster sauce ,its pretty high and then they adding g more salt. Just be careful as the sodium content may be high. Iam gonna make it using low sodium broth.

Perhaps I’m being too critical... but there are some major mis-steps here. Ingredients are (to me) unusually themed. Green onions cut into 2” segments add a lot of color to something like this - and a cilantro garnish... The chicken breast should be omitted (add chicken flavor from roasted chicken thigh used in making master stock) - use bamboo shoots (strips or quartered whole chunks).. Cutting the tofu on a stable surface allows for more uniform pieces. First turn the tofu block on its side and divide tofu into two equal “sheets” - then divide those two sheets _at the center_ and make 4 thick strips. Divide those 4 thick strips to 8 thin strips. Then turn the work 90° and perform the same cuts again to achieve 32 equal sized cubes. Keeping the size uniform is important. The texture and flavor will be better in this shape. Always divide the tofu *from the center* to always achieve an even cut. Basically it’s suppose to be like making a stir-fry, which you flood with a master stock. After adding the stock, the tofu can be gently set on top. Don’t let them sit on the bottom of the pan, this will cause the tofu to break, or scald. Add a tiny bit of toasted sesame oil and let the entire dish come to a boil - then lower the heat and allow it to gently simmer for at least 30 minutes. *The tofu needs this time to properly absorb flavor.* Lastly it is thickened with a starch slurry (potato starch is preferred, corn starch works just as well though)... as an optional step, you can grate some garlic into a paste and add it to the soup directly before serving. Make sure to stir it well if you do this to disperse the flavor. 1 average to large sized clove should flavor a soup about the size of 2-3 bowls worth of what you’re serving. Or served individually, a half clove of a normal to small sized garlic clove can be used. Chili oil (红油) is a nice final garnish. Use it sparingly as it will overpower the delicate balance flavors in this dish. Either way I hope more people are inspired to try this style of soup.

it looks delicious. the slurry serve as soup thickener and not an ingredient to be sauteed. so may I suggest to put the water first before adding in the slurry.
