Just cooked with this recipe and I am fortunate to have local fish shop selling salmon fish head bone and what a broth it turned out to be. Thank you.
I made this a few nights ago! I was able to get a fish head and that added tons of flavor to my soup. The head has a lot of tender meat. I had used fresh catfish filets and added some of my favorite stewing vegetables in addition to yours. This recipe is definitely a winner and now my favorite way to eat tom yum 🐟🌶😋

Tom Yam with fried tofu is delicious, too. I use the lemon grass fried tofu and brown rice to make it a meal, with seconds!

i use chicken stock for a more rounded and subtle flavour, also i use large yellow onion if i don't have access to shallots, and of course lots of lime juice... yum.

Thankyou for this video. I have had fish broth, boiled head and bones, frozen for a while now and was just given some fresh galangal. In searching on how to use galangal I have found you and this particular video. I grow my own chillis and suspect i will have some scary tom yums, thankyou :)

I don't understand why so many people are hating on tilapia. For me it's very good and affordable. Maybe I'm not too picky.

Hey cHemon - and yes we're a little surprised ourselves from the bad rap that Tilapia is getting, and that might be because we are in Canada where the issues that seem to surround it are a bit of a non-issue (our fish farms are different for instance from those in China). My dear Pailin can you please please tell me if i can use dried galangal ?? And how? Do i have to soak it? Same with the lime leaves can use them dry?

you can, but the flavor is truly not as fragrant. i wouldn't worry too much about the galangal, you can completely omit it-some of the most traditional tom yums do not have galangal (this is not to say that I do not like galangal, i love it so much that i always keep it fresh in my fridge).

Hi Pai! wondering if you ever tried freezing Thai Basil? I love too far from Asian grocery stores so I don't just drive extra miles just to get one item. I love Thai Basil a lot in my cooking but sometimes it goes bad before I even have a chance to use in my cooking. Any tips on how I should freeze it?

If you have my book I talk about how to do it in detail in there. But basically you have to quickly blanch it before freezing.

Consider keeping the stems of herbs in a cup of water in the fridge or try the ziplock and straw method (look it up on youtube). I've frozen extra italian basil before by throwing all the basil in a small food processor or blender and making a paste and freezing that.

What is edible and inedible in a fish head? I want to make stock using one but I'm a little apprehensive.

Cameron Alexander everything is edible in the fish head (besides the bones of course). it's mainly about checking how fresh the fish head is (i.e. gills must be bright red and eyes clear)
