Welcome to Cooking with@cheftuan Today I want to show you one of the most delicious, quick and easy stir-fry dishes. Almost every Asian kid grew up eating this and it is still one of my favorite go to meals as an adult. This dish takes about 10 minutes from prep to service. I like serving this with freshly cooked Jasmine rice.

Recipe (makes 1 healthy portion)
3 eggs
1 C chopped FRESH tomatoes (use your favorite tomatoes or whatever is available to you)
1 scallion, chopped. (reserve white parts for flavoring your oil)
2 tbsp soy sauce
1/4 tsp fish sauce
1 tbsp Shaoxing wine
1/4 tsp ketchup
1/4 tsp finely chopped ginger **OPTIONAL** but recommended
2 tbsp olive oil
Optional garnishes: chopped chives and cilantro leaves
Step 1: Crack eggs in a bowl and combine with fish sauce. Beat until well combined.
Step 2: Slice scallions, reserving the white part for flavoring your oil.
Step 3: Chop up your tomatoes.
Step 4: Heat skillet or wok on high.
Step 5: Add oil and heat until it shimmers.
Step 6: Add white part of scallions and ginger (if you're using ginger) and sauté until very fragrant. No coloration.
Step 7: Add tomatoes and sauté until soft. You can mash up some of the tomatoes to release their liquid to create a nice sauce.
Step 8: Move tomato mixture to one side of the pan and move the empty space of the pan over direct heat. Add your soy sauce and let it reduce for about 10 seconds before you mix it with your tomatoes. (If using a wok, drizzle soy sauce around the edges of your wok right above the tomatoes)
Step 9: Add Shaoxing with and stir to combine.
Step 10: Move your tomato mixture to one side of the pan and slowly pour in your beaten eggs.
Step 11: Keeping the eggs and tomatoes separately, gently use a spatula to stir the eggs. You want to create big curds so don't whisk.
Step 12: Once your eggs are about 70% cooked, TURN OFF THE HEAT, and now stir to combine your eggs and tomato mixture.
Step 13: Add the tomato ketchup and gently toss to combine. Garnish with chopped scallions and/or chopped chives and cilantro leaves.
Step 14: Serve with freshly cooked Jasmine rice or your favorite noodles or toast. Enjoy!
