I noticed some books are not published independently but through publishing companies. What do you think about publishing through these sites?They have also the benefit of better audience and lists outside of Amazon and can also publish them in bookstores. Plus, they have better privileges on Amazon, like more images they can upload, enhanced A+ content and more

No, not all are independently published and the ones that have more images are not published through Amazon KDP but through Amazon FBA or Marketplace. You would have to print, store and fulfil your own book orders to do that. Others are still published through KDP but they have bought their own ISBNs and that's why their publishing name is shown under publisher.
