Yours is the only fishing channel that I watch the cooking part. I cooked my way through college during the early 80s in restaurants that ranged from family style to Michelin Stared fine dinning. Usually I can do better in the kitchen, but not in your case. Your knife skills alone are worth the price of admission, but combined with the way you cook I'm in total awe..

I love the vids with a lot of knife work. I can honestly say that watching you prepare fish has improved my overall knife skills. I'm trying to emulate what you do and I'm certainly no where near as good, but I feel like I learn more every time I watch you.

I catch shad on the Bonneville Dam on the Oregon/Washington border and they are 4 lbs to 5 lbs average. We love them for the eggs.

I love the fact that you're taking local sustainable fish that were previously overlooked by most people, and showing just how amazing they can be for the table. I've seen what they do all over Japan with regard to seafood, and have always wondered why Americans don't appreciate what's right in front of them.

Shad is some of the best smoked fish I've ever had! Of course they were larger, I'd say 3 to 5 pounds. Great eating!

If ever you're on another WA state roadtrip, particularly along the Columbia River during June and July, the transplanted Atlantic shad are running to spawn, average 1 1/2-2lb each and most are PACKED full of roe. They run in the MILLIONS over the dams now and can be caught below any of the first four dams up from the Pacific. My favorite location is on the WA side just below John Day dam. A two mile long polished gravel beach perfect for primative camping. I know they hog a ton from below Bonneville too. I've seen crab fishermen from the coast load up on crab bait by the coolers full of shad. Fun as all get out. Can only imagine what you'd use the roe on. I scaled, deheaded/finned, brined (b.sugar/salt) applewood smoked for an hour or so then pressure canned for 30-40 minutes and it was surprisingly smoky savory good. Made an excellent cracker dip. The pressure canning took care of the bones which became hardly perceptible.

This is awesome. I've been a sport fisherman all my life, and mostly targeted the largest fish I could. Until, I lived in Japan, and married into a Japanese family. Now, I'm much more interested in catching and eating the much smaller fish. Herring, shad, mackerel, anchovies.... oishi so.

Here in the Southeast... NC to be exact. We eat shad. We usually use it as baitfish for Stripers & catfish. But you don't bring any fish home, you bring shad🤣 Deep fried is the way to go!😋🔥🔥🔥

It's cool to see some of the landscape I saw when I visited there a couple years ago. A man was walking with his plate in hand when a seagull swooped in and stole his recently bought food...lol. I remember seeing some signs on the wharf like NO SWIMMING! SHARKS! And DON'T EAT THE FISH!

I missed fishing for this. In SIngapore and Malaysia the name is Tamban. The variety with dots is Tamban Sabtu. In South China Sea, it could grow as long as 5 inches or so. But it had been getting smaller. When freshly caught, it has a fresh smell, close to pandan leaves. It has a blue tinge at the top but fades after some time. Difficult to remove the scales when freshly caught. I would soak it in water and scrap the scales off under water. We usually deep fry it. We usually use Sabiki with white or light green threads. The line should be soft like 5lbs. Stiffer and larger hooks will scare off the Shad. Use a light action rod. Change the sinker according to the current. We usually cast the sabiki against the current. Gold colour hooks and flurocarbon lines will attract more small fishes.

Here on the East coast if your smoke or bake the shad the bones turn sardine like and you can eat them without the de-boning. Your fried shad look yum!

My mother in-law taught me to fillet iwashi for sashimi with a spoon. Crude, but effective. Your technique is much better.

I catch shad here in Chico on the Sac river and yea they are like twice the size by that point, but I think eating them when they are smaller might be better cause ive noticed the bigger they get the more mushy they become when you cook them. Great video as always Taku!!

You should come up into the Valley sometime and fish in the American or Sacramento Rivers and find some Sacramento Pikeminnow and try them. They are super boney but accordingly they taste good. Most people think they are invasive so they just kill them on sight but they actually aren't, there's a different species of pikeminnow that are invasive. They also say they are a trash fish that's not worth keeping because of the bones but I've seen people turn them into fish cakes and stuff and they say that or pickling is the best way to cook them. I figure you could almost run them through a blender first (after filleting) to make a fish paste similar to what's sold in Japan and then cook it in whatever you'd typically use fish paste for like fish balls in ramen/soup or fish cakes or whatever.

Where I’m from (st. Petersburg Florida) we call the green backs and they get huge here . We use them as bait but at mid size about 2.5 - 4 inches. Man now I can eat my own bait lol. Thanks Taku I’m definitely tryin this recipe.

Hey Taku Just FYI larger American shad make delicious sashimi . I come from a commercial Gillnet salmon fishing family and anytime my Dad incidentally caught one in the Fraser River (B.C Canada) it was always a big deal . Very delicate likened to tuna Maguro but lots of fine bones to navigate around
