Hello Yeung! I tried today the first dish and is amazing! I added 2 more ingredients and have to do this recipe with rice sticky noodles because I couldn't find the noodles you used in the dish. So the two ingredients I added were frozen sweet corn and red beans and tasted good. Thank you for sharing your recipes.

That last rice dish looks a lot like Biryani, which I was introduced to a couple of years ago by an Indian friend. I love the way you describe the flavors I can almost smell it from behind the screen!

All dishes look yummy will surely try. But not sure if Saffron will leave its color and aroma directly by adding generally it is added to a little warm milk and then used in the dishes as required.

Oh my, watching the onions, garlic, spices and oils cooking together with so much color and then the colorful veggies added are so pleasing to the eye. It's like any artisan working on a master piece and the more u work on or add to it the more it excites you. My mom was a fantastic cook and baker and passed it on to me, so I get excited about food, trying different ingredients to change a dish that I have cooked before and serving it to the family. Thanks for making my day! Question: do u use yellow, white, sweet or Vidalia onion. Each may give a different taste. Also it would help to note if it is small medium or large in size. It would help us who are just starting to cook plant based Asian food to maybe say, 1 Medium yellow onion which is about 1 cup. That reference would help us so much to make sure we get the best result from what u r teaching us to cook. Thank you for such an appeasing site that is so easy to follow!

Hey Wil!! Another one hit way out of the park!! Out of curiosity, with that last recipe that called for cardamom pods--I see that you removed the cinnamon stick but do you remove the cardamom pods as well or are they edible once cooked?? Thanks!!

Oh dear, this was one of my favourite food channels, because it was peaceful and meditative as I learned how to cook the recipes. Now there’s piercing ultra-jolly music annoying me 😅 People who like voice plus music can add music to a quiet video. People who like quiet videos can’t take music away (the mute button stops me learning the recipe!) Are you going to add music to all future videos please?

I cannot use oil and you always start with your chili oil to saute (I dry/water saute). I love your recipes but how can I adapt them to omit the oil?

I would say (without being asked, yes, sorry) that you can sauté the way you are used to and it shouldn't be much difference (well, you don't know how his food actually tastes so you can say there's no difference). There's lots of ingredients to a recipe that give it the body and the taste. If anything, the oil is hot and smokey, if you like those you can add chilli on its own and some smoked paprika. There's that liquid smoke also that seems trendy but I'm not at all familiar with it. I use smoked paprika a lot, I love it. So 😅 hope my ramble helped a little.
