Most people don't know about these kind of Hispanic foods and very little Americans ever heard about them as they are special recipes from our ancestors. My mom's patties were thin like pancakes. So good!

Rachel, I born in Laredo , raised until I was 11, I relate to so much of what you cook. I enjoy how you teach . I am not of Mexican blood but I relate so closely. I don’t remember who taught me to cook all the Mexican food I cook but it is second nature. You remind me of so much. Thank you. I raised my family on good Mexican food and they all love it. I have to honestly say, I don’t remember this dish. I do remember cooking the cactus petals…I remember harvesting them and scraping the thorns off. I must try this dish. Do the tortitas taste very fishy ? I ave saved all your recipes that are Mexican. Thank you, sweet lady.

When I was young I did not eat the shrimp but I LOVED the nopalitos and sauce with beans, rice and corn tortillas. My mom would let us four kids pick what we wanted her to make us for each of our birthdays and this was my big brothers choice every time. Even as an adult he would pick this dish. After my mom passed I made it for the first time for his birthday and I must say it came out pretty darn good. My mom would have been proud. His birthday is in two weeks and I know what we’ll be eating. Thank you for bringing back so many memories 🥰

Rachel, you are the first person that I have seen using two spatulas at the same time! Thank you for this tip because it has made cooking the salmon patties much easier and my eggs too! This looks delicious! But it is very hard to find dried shrimp here- i will look on the web!
