Rachel, I born in Laredo , raised until I was 11, I relate to so much of what you cook. I enjoy how you teach . I am not of Mexican blood but I relate so closely. I don’t remember who taught me to cook all the Mexican food I cook but it is second nature. You remind me of so much. Thank you. I raised my family on good Mexican food and they all love it. I have to honestly say, I don’t remember this dish. I do remember cooking the cactus petals…I remember harvesting them and scraping the thorns off. I must try this dish. When I was young I did not eat the shrimp but I LOVED the nopalitos and sauce with beans, rice and corn tortillas. My mom would let us four kids pick what we wanted her to make us for each of our birthdays and this was my big brothers choice every time. Even as an adult he would pick this dish. After my mom passed I made it for the first time for his birthday and I must say it came out pretty darn good. My mom would have been proud. His birthday is in two weeks and I know what we’ll be eating. Thank you for bringing back so many memories 🥰
