Hi I’m a baker too and I learned from an Elder lady when using eggs and baking. Always crack your eggs in a separate bowl one at a time not only for shells but just in case the egg is bad. She also taught me to take out the white(embryo/bitty) from the egg, she was a southern woman who ran a restaurant in her younger years. Just a tip❤️

Blood doesn’t do any harm. It’s just that ppl cringe when they see it. My Mother was raised on a farm. She said blood doesn’t harm the egg at all. She also said u will always know when an egg is bad just by the smell. Bad eggs smell real bad. U can’t miss it.

Yes it is, I have a red one!😍 You should always crack your eggs into a separate dish first. You never know when you can get a bad egg, and that could save your cake! That rule has saved me many times!

Suggestion: add the sour cream after the eggs. When you add the sour cream at the end, you run the risk of overheating the batter, which renders a tough cake. Just a suggestion.

Zachary, am mot sure I agree; I think the secret to this pound cake is (2) adding the sour cream last and (2) not beating the butter/sugar mixture too long. We must remember our mothers/grandmothers beat the cake batter by hand. The original cake was dense not light & fluffy (like a bundt cake). Tracie, I think you hit the nail on the head. I saw one other video like yours. All the others alternate flour & liquid. The lady made her mothers recipe: she insisted that the sour cream be added last AND the batter was beaten by hand. I think you have the "secret" to perfect texture. DO NOT CHANGE A THING GIRL!

I made your cake and it is delicious, however, it didn't rise as high as it should have. and that's because I cooked it on 350 instead of 325. it cooked too fast. There were no holes. I normally keep my oven set 350 when cooking meats. I am not a baker, but I can cook (good). Thank you for the recipe.

I just made this recipe earlier tonight and it came out perfect! The top and edges were crunchy like you said and the rest of the cake was moist and not dry at all. But I only baked it at 325 for 1 hour. That's all it took with my oven. If it was any longer then it would have been dried out. But thank you. It turned out to be the best pound cake I ever made. And I've made a few over the years that didn't come close to as good as this one. Thanks for the recipe.

FYI: The reason you don’t crack eggs directly into your recipe is because the egg could have blood in it and you will have to throw away all of expensive butter and whatever other ingredients you have in bowl.

I always add 1/2 the sugar cause then u taste the butter more. If u taste the sugar first on anything. It’s usually too much. Many ppl get used to the taste of too much sugar, but try it my way and you’ll see how much better it tastes. Butter adds so much more to the taste buds. 🌝👍🙏

Yes! I always add half the sugar cause u taste the butter more. Poundcake shouldn’t be too sweet. Afterall, u eat it for the butter, then u don’t have to add more butter. It’s the sugar that camouflages it. 👍

My mom made a pound cake with a crunchy top when I was a teenager. I have tried other pound cake recipes and could never achieve it. My mom doesn't even remember what her's were like much less the recipe. This was spot on. I made it for the small church I pastor and it was delicious. It was like a real pound cake most recipes I've tried come out more like a crumbly dense cake. This was moist, tasty, chewy on the inside, crunchy on the inside. This will definitely be a keep. I am so grateful for you sharing this recipe.

Omg... I made this cake and added the sour cream last only thing different was I use 3 sticks of butter. I am such a butter girl.. Thanks for the tip 😋😋

If u use half the sugar, u won’t need extra butter. U will taste the butter first. If u taste sugar first in recipes, it’s overpowering the other ingredients. One guy on the thread said to add the sour cream after the eggs, otherwise the cake gets tough. Makes sense.

I tried this recipe yesterday for a family function and it was an instant hit even using my hand mixer, the cake stood tall and was so moist and delicious. I didn't have a slice left. I will be using this one again.

Regarding your hesitancy to leave eggs unrefrigerated... it is interesting to note that unwashed eggs from a farm will last months at 70 degrees. Washed eggs will last for weeks at 70 degrees. We produce a few thousand eggs daily and bring a dozen at a time to the house for personal use. We never refrigerate personal use eggs. Any one dozen is generally consumed within 2 weeks in our house, but I would not hesitate to use eggs that are a month old. This is good to know for baking when ingredient temps can matter. (We do refrigerate those shipped commercially because it is required by law.)
