@Kathrine Kwa Thanks for the recipe. Successful first try. Turn out beautifully using a stainless steel steamer rack with parchment paper as I do not have the bamboo rack. I used cake flour with 7up. Temperature matters, I used water bath because my ingredients were cold. The split on top was beautiful in 4 equal parts like a flower. Soft and fluffy, not dense. Nostalgic moment for me as it reminds me of my aunt who passed away. She used to bake this for me when I was young. 👍😁

1st try last night and successful except the top didn't "bloom", otherwise taste is ok. I suspect it's because the "fire" is not consistently strong as I'm using an electric steamboat pot to steam, that's why the cake didn't bloom. Thank you for sharing!

She already stated above -- 200 ml isotonic drink (汽水 - 7up, soda water , 100 plus) Pandan is very aroma, a plant that very commonly used in Asia. The English name is screwpine leaf.

IMO Not a good idea to add too much eggs in cakes. The eggs helped to bind the flour so it does not fall apart when you cut it but too much egg causes your cake to turn into rubbery foam. I didnt use large eggs, only medium size eggs will do. It is better to make small fluffy soft cakes than a large rubber foam that bounces back when you throw to the wall.😂

I tried this exact recipe and method and it turns out great, the cake did bloom and it’s not too sweet despite that much sugar. But I would like to add more egg in my next try, will give an update. Update: I added two more and use duck eggs instead of chicken’s and it turns out a lot tastier, but it did not bloom. But the texture is still soft, light and moist. The only problem is it did not bloom, and I guess maybe because of the basket size.

I just used a stainless steel basket which has wider length and shallower and is bigger than the one in this video. Definitely not match with the batter. But as I tried the recipe again using 6 small bamboo basket that are 4” wide and 2.5”height, came out bloomed and so fluffy. So to my experience, I think as long as u fill the basket full about 9/10 and ur basket has big holes, the result will not be disappointing. Hope this help.

You cannot use plain water. Soft drinks are carbonated so they contains bubbles which help in rising the cake.

@@virtualworldofcraps2237 be prepared for my long write up. 😅 For the crack: make sure the water in the steamer is boiling before putting the batter for steaming. And never open the cover in between. Following the 2 factors, the cake will smile (Chinese saying for the split or crack). Cake is dense, overmix flour into yolk batter. Wrong liquid measurement. Opening the steamer lid before required steaming time up. For the rise: The stage to whip up the egg plays an important part. Be sure to beat it to ribbon stage. For 1st timer, do not attempt to reduce the sugar as it helps whipping up and stabilising the foam structure, just like meringue. These 2 factors are very crucial for cake's structure (baking and steaming). If u can't achieve it, be prepared for the failure. Also, do not open the lid before the required cook time is up. Lastly, make sure you use the correct size mould, basket. (Saying this as my neighbor steamed egg cake always flat since her mould too big. 🤣🤣) Hope these help you steam a beautiful egg cake. Remember to thanks me if u have succeed. But don't throw me rotten egg if u fail. 🤣 Try baking a chiffon cake, if you can bake one nicely, you can succeed in most cake required this foaming technique.
