I am a Malaysian of Indian descent. The guy seems to have spent some time in Malaysia I could see he speak some basic bahasa Malaysia 👌👌. You plan to cook Malaysian food and add to your restaurant menu is a brilliant idea. Malay food recipes are simple and easy to prepare. You should add more malay menus to your list. @@nasilemak6694 that Maggi paste is not a must have for making ayam masak merah ..it basically just simple tomato and chili ketchup mixture so you can always make your own paste at home if you ran out of it 😅😅

The chili paste is very easy. You can try to find dried chilies, lemongrass, ginger, onion,garlic,tumeric and blend altogher then you have the paste ready. Pls do it. The paste is suitable for every dish you cook such as for rendang, curry etc

If its too spicy..you can replace sambal with tomato puree and diced tomatoes. If the asam keping taste is too overpowering for your taste bud, 1 keping already enough..the diced tomatoes already acidic..you can also replace sugar with tomato ketchup...add green peas or diced carrots...the recipe isnt fix...each household has their own version of ayam masak merah... But maggi also produce the ayam masak merah paste in a packet you know...its way easier and simpler. Nways,your ayam masak merah def looks delish!job well done!

Hi Christiana & Jaoa 👋🏻 wow I'm so impressed with ayam masak merah Christiana's version 👍 the color and ingredients are exactly the same. There are few versions of making the dish , some add spices like cinnamon stick , cardamon you know the 5 spice but the dried fresh spices just a little bit 👍 and you could add a tablespoon of cumin too so it will become ayam masak merah berempah means with spices 😆 you should try this version more tasty not so much on the onions and ginger maybe half of the potion you've used and another one you could add half cup of coconut milk really delicious or just add a little bit of everything together 🤣 Your family really enjoying the dish and that's the best part of it when everybody was smiling and eating after long preparations 👏🏻👏🏻👏🏻

Agree! I grind a teaspoon of coriander, cumin and fennel seeds into powder. Add into the sambal while frying. If you have lemongrass and kaffir lime leaves. That's wonderful. You need to be around London to find an Asian market with lemongrass, kaffir lime and other spices.

I have viewed your sojourn videos on the Malacca Portuguese Settlement. Surreal, I sense the same homey feel even tho a cosmic 12,000 km apart. Wow, Im totally impress by you guys. Both of you and your auntie as well. Im glad that you trying to cook our dish which is Ayam Masak Merah. From my view, you did a good job ! Correct ingredients, the amount just correct, but maybe in Malaysia we definitely used triple amount of Instant Sambal Paste that you bought in Malaysia, hahaha. Believe me its not to spicy cause you balance its with sugar. You cooked all the ingredients step by step and most important you cooked it until the oil comes up on the surface. What we called it ‘’ Pecah Minyak’’, meant that you cooked the paste trought, all the water evaporate, and you can smell it. Ayam Masak Merah basically we cooked for such a big event or big celebration like Hari Raya or on the Wedding Day. Its simple but marvellous of course, It has sweet, sour (just a hint, not to much), and spicy. But your Ayam Masak Merah version is a simple recipe one. Next time, please try this recipe : (by using same amount of ingredients you did, chicken, onions, garlic and etc.) So when you fry all the ingredients, fry it with 2 pieces of cinnamon sticks, 5 pieces of cloves, 2 pieces of star anise, 3 pieces of cardamom. And also a hand full of mint leaves and 2 sticks of lemongrass if you have there. Fry it before you adding the wet ingredients which is tomato paste and sambal paste. Im usually using palm oil (olive oil is fine) plus Ghee (cows saturated oil), but you can substitute with 3 tablespoons of butter. I saw on the vlog you used too much oil, maybe you can remove about 4-5 tablespoons on that recipe. Make sure use the same oil you fry the chickens. You know what, with all the ingredients I told you, just give an aroma to it, the flavour just blown your mind 🙏🏻. Otherwise, just the same step. If you want a bit gravy and saucy, just add half a cup of water and cook a while until it reduce a bit BEFORE you adding the chickens. Done ! Make sure you try and do a vlog, notice meeeeee. 😭

With my mother version, she will add 1-2 stalk of lemongrass and then add a bit of evaporated milk or coconut milk. It may reduce the spiciness and add a more savoury side to the dish. My fav during the Eid celebration

Great job guys!...Glad your family likes it...next time if you make ayam masak merah, pair it with tomato rice ( nasi tomato), that is rice cooked in tomato paste n some other stuff n spices...you can find the recipe on youtube...and for veggies, simple salad of tomato, cucumber, onions, parsley n some lemon juice will do...you can eat with potato chips ( easy to find for you guys i think), if you want some crunchiness in your bites...again, good job guys! 👍🌟...Cheers from Malaysian in Kuwait 🇰🇼 !

That looks yum! Anyway for the chilli paste, you do need to get dry chilli. Remove the seeds if you want less spicy. Then soak it in water (we normally use hot water). Let it rest. Then blend it. You can add a little bit of shrimp paste (belacan) if you're not allergic to it, to enhanced the taste. If not, you're good to go! You can blend some and keep it refrigerated for your future use.

You actually can cook ayam masak merah by using chilli sauce and chopped tomatos. If no chilli sauce, just blender the tomatoes.
